PERI PERI CHICKEN

 


Prep Time : 15 mins
Cooking Time : 30 mins
Serve : 6

INGREDIENTS
Chicken  pieces -  500 gms
Garlic pods - 5 - 6
Salt - to taste
Vinegar - 3 tbsp
Red chilly powder - 1 tsp
Whole red chilly - 3 - 4
Red bell pepper - 1
Oregano - 1/2 tsp
Black pepper powder - 1/2 tsp
Oil - 1/2 cup

METHOD
Take a blender add red bell pepper,black pepper powder,whole red chilly,red chilly powder,oregano,salt,garlic pod and vinegar and make a paste.
Marinate chicken with this paste.
Keep aside for 30 mins
Heat oil in a pan and place the chicken pieces when chicken is half done  add leftover bell pepper sauce and cover it and cook in a slow flame.
After ten mins flip it and cook in a high flame for five mins and now cook for slow flame for five mins
Turn off the flame,serve hot.

CHILLY FLAX CORIANDER LEAVES PURI



Prep Time- 25 mins 
Cooking Time- 15 mins 
Serve- 2 

 INGREDIENTS
Wheat flour- 1 cup
 Maida - 1/2 cup 
Rava- 1/2 cup 

Carom seeds- 1/4 tsp
Onion seeds - 1/4 tsp
Chilly flax - 1/2 tsp 
Clarified butter- 2 tbsp 
Coriander leaves - 2 tbsp 
Oil- for frying 
Salt- to taste 

 METHOD 
Take a large bowl add wheat flour,maida rava,,chilly flax, clarified butter, carom seeds, onion seeds, salt, coriander leaves and mix it well.
Make a dough with little water,
Keep it aside for 30 mins, divide the dough into balls and roll out small puris out of them .
Heat oil in a medium flame to deep fry kachori.
Serve hot

 





CHEESE CHILLY TOAST

 


Prep Time : 25 mins

 Cooking Time : 15 mins
 Serve : 2

 INGREDIENTS
 Bread - 4 slice
 Grated processed cheese - 1 cup
 Finely chopped green chilly - 2
 Finely chopped capsicum - 1
 Butter - 50 gms
 Black pepper powder - 1/4 tsp
Garlic cloves - 2

 METHOD
 Take a bowl add green chilly ,capsicum, butter ,black pepper powder,grated garlic cloves and grated cheese and mix well
. Toast the bread and spread the butter cheese mixture
 Grease non stick pan with butter and place the bread slice.
 Cover it and cook in a low flame for two mins
. Cheese melt on the bread now your open cheese chilly sandwich is ready to serve
. Cut into two pieces.

TOMATO CHICKEN WITH NAAN

 


Prep Time      : 45 mins
Cooking Time  : 45 mins
Serve -  4

INGREDIENTS
For tomato chicken
   Chicken pieces        -      1 kg
Oil        -   1/2 cup
Salt  -  to taste
Green chilly   - 10 chopped
Ginger grated  -     1tbsp
Garlic pod grated - 1 tbsp
Tomato  chopped    -  5
Pepper    -      5
Clove      -      5
Black  cardamom  -   1
Green cardamom  -  2
Cinnamon  - 1 inch stick
Cumi n seeds - 1 tbsp
Kashmiri mirch powder - 1 tsp

METHOD
    Clean and wash the chicken and drain out water and keep aside.
Heat oil in a pan and add chicken pieces and salt and cook for five minutes in high flame.
Now add grated ginger and garlic and mix it well and cook for few minutes.
Add chopped tomato and green chilly and cover the lid and cook in a slow flame for ten minutes.
 Roast pepper,cloves,cinnamon,black cardamom ,cumin seeds and green cardamom and grind to make a powder and add in the chicken and mix well.

Add kashmir mirch powder and mix well.
Serve hot with fried rice.

For naan

INGREDIENTS
All purpose flour- 1 cup
Sugar- 1/2 tsp
Salt- to taste
Baking powder- 1/4 tsp
Baking soda- 1/4 tsp
Clarified butter- 1 tbsp
Curd- 1/4 cup
Onion seeds  -   2 tbsp
Sesame seeds   -    1 tbsp
Chopped coriander leaves- 2 tbsp
Butter- 50 gms

METHOD

In a kneading bowl  add hot milk,curd,baking powder,baking soda,salt, sugar and  ghee and mix well. 
Now add all purposeflour and mix it well
Make a soft dough no need of water.
Keep aside for one hour in a hot place.
Take some dough and make medium size ball.
Roll into balls.
Sprinkle some water and now add onion seeds ,sesame seeds and coriander leaves and roll out.

Heat the tawa,sprinkle some water on the other side of the  naan in order to stick it to the tawa and cook it for one mins on a high flame .

After a minute, turn the tawa and cook on high flame till it gets golden brown.
Apply some butter over the hot naan and serve hot.
