CARROT HALWA

 


Preparation time- 20 minutes
Cooking time- 1 hour
Serve - 10

INGREDIENTS
Chopped carrot     -  2.5 kg
Milk   -    1 kg
Sugar    -   500 gms
Mawa    - 250 gms
 ghee     -   1 cup
Cardamom powder    -   1 tsp
Almonds   -   2 tbsp
Chopped pistachio    -    2 tbsp


METHOD
Wash, peel and chop the carrots
. Pressure cook the chopped carrots and milk.
 When cooker release the whistle turn off the flame. Once cooled, open the lid.
Simmer the flame and stir continuously till it gets thick
. Add   ghee and sugar and mix well
. When the mixture (carrot and milk) gets dried, add mawa and saute for 4-5 minutes.
Add cardamom powder, raisins and cashew nuts and mix well
Garnish with almonds and  pistachio and serve hot.






















COUNTRY VILLAGE CHICKEN

INGREDIENTS
Chicken pieces - 1 kg
Chopped onion - 4
Ginger - 1 inch stick
Garlic pods- 8
Kashmiri mirch powder - 1 tsp
Red chilly powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/2 tsp
Curd - 1/2 cup
Whole black pepper - 4 - 5
Cloves - 4 - 5
Black cardamom - 1
Green cardamom - 2
Cinnamon - 1 inch stick
Tomato - 2
Salt - to taste
Oil - 1 cup

METHOD
Take a blender add ginger garlic ,tomato and 2 chopped onion and make a paste.
Heat oil in a pan and add  bay leaf and whole garam masala to crackle now add chopped onion and saute until transparent.
Now add  chicken and fry for 4 - 5 mins. Add ginger garlic ,tomato and onion paste and mix well.
Add red chilly powder ,coriander powder ,turmeric powder and kashmiri mirch powder and mix well now add curd and mix well.
Cover it and cook in a slow flame until oil leaves the pan.
Add one cup of water and salt and cook for five mins.
Garnish with coriander leaves and serve
























FRUIT SALAD

INGREDIENTS
  Pomegranate pearls - 2 cup
Apple - 1 cut in sliced
Guava - 1 cut in sliced
Whole guava - 1
Skin removed orange       -   2 orange
Blueberry - 10 pieces
Strawberry - 6 pieces
Dressing
Honey  -   6 tsp
Salt      -   1/2 tsp
Black pepper powder   - 1/4 tsp
Ginger juice     -  1 tsp
Lemon juice   -  3 - 4 tsp
Finely chopped mint leaves   -  8 - 10

METHOD
Take one guava and make small whole and remove the inner pulp and the seedsWe take the pulp and seeds to blend in the blender ad add salt,sugar and red chilly powder and mix well.
Pour the guava pulp in the guava fruit

To prepare the dressing,mix honey,salt,black pepper powder,ginger juice,lemon juice and chopped mint leaves in a bowl.
Combine all the fruits in a bowl.
Add dressing at the serving time.
