BESANI MIRCH


INGREDIENTS
Green chilly                                      -                                           100 gms
Chickpea flour / besan                      -                                            2 tbsp
Red chilly powder                             -                                           1/2 tsp
Turmeric powder                              -                                            1/2 tsp
Mustard seeds                                   -                                            a pinch
Cumin seeds                                      -                                           a pinch
Fennel seeds                                      -                                           a pinch
Sugar                                                  -                                          1/2 tsp
Salt                                                     -                                           to taste
Oil                                                      -                                          2 tbsp
Water                                                  -                                          1/2 cup

METHOD
Heat 1 tbsp oil in a pan.
Add chickpea flour / besan and roast in a medium flame until light brown.
Keep aside.
Heat up remaining oil.
Add mustard seeds,cumin seeds and feenel seeds to crackle.
Add green chilly,salt,sugar,turmeric powder,red chilly powder and mix well.
Add water and roasted chickpea flour / besan and mix well.
Serve with rice or chapati.

FRIED FISH



INGREDIENTS
Rohu fish                                      -                                         250 gms
Red chilly powder                        -                                         1/2 tsp
Turmeric powder                          -                                         1/2 tsp
Lemon juice                                  -                                         1 tsp
Rice flour                                      -                                         2 tbsp
Salt                                                -                                         to taste
Oil                                                 -                                         for frying
Garlic paste                                   -                                         1 tsp

METHOD
Wash and clean the fish.
Marinate fish with red chilly powder,turmeric powder,salt, garlic paste and lemon juice for 1/2 an hour.
Add rice flour into the fish and mix well.
Heat oil in a pan and deep fry all the fish pieces till brown both the sides.
Serve hot with sauces.

BISCUIT PUDDING


INGREDIENTS
Milk                                      -                                          2 cup
Custard powder                    -                                           2 tbsp
Sugar                                    -                                           2 tbsp
Marie biscuits                       -                                           2
Crushed almonds                  -                                           1 tbsp
Raisins                                  -                                           1 tbsp

METHOD
Boil milk in a thick bottom vessel.
Once boiled keep it in a low flame.
Add custard powder  and sugar to 2 tbsp cold milk and mix well.
Pour the boiled milk into two bowls.
Add custard mixture prepared before to one of the bowl,and to other bowl add mixture of cocoa powder and custard powder.
Now pour the custard milk to a glass and put a marie biscuit dip in milk over it.
Add almonds and raisins over it.
Then pour the cocoa and custard mixture over the biscuits and put one more biscuit dipped in milk over it.
Add raisins and almonds to the glass.
Add custard mixture over it.
Now pour the cocoa mixture over it.
Serve chilled.

PANEER CREAMY PASTA WITH WHITE SAUCE




सामग्री
पास्ता     -  1  कप
दूध     -  2  कप
कटा  पयाज़   -    1
मैदा     -  2  tbsp
मक्खन    -   2 Tbsp
काली मिर्च पाउडर   - 1 /4  Tsp
नमक           -  स्वादनुसार
ऑरेगैनो       -  1 /4  tsp
 मॉजरेला चीज़       -   1/2 cup

विधि
1 tbsp  तेल और पानी   गरम करे  pan  मे।
पास्ता  उबाले  और छान  ले
मक्खन  को पैन  में गरम  करे।
पयाज  डाले  और 1  - 2  मिनट  चलाये।
ऑरेगैनो  डाले और मैदा ,काली  मिर्च डालकर चलाये
धीरे - धीरे कर कर दूध डाले।
पास्ता ,क्रीम  और मॉजरेला चीज़  मिलाये।
नमक डालकर गैस बंद कर दे
INGREDIENTS
Pasta    -   1 cup
Milk     -  2 cup
Chopped onion   -  1
All purpose flour /maida    -     2 tbsp
Butter  -  2 tbsp
Cream   -  1 tbsp
Black pepper powder  -   1/4 tsp
Salt    -   to taste
Oregano    -  1/4 tsp
Mozarella  cheese     -     1 cup

METHOD
Heat 1 tbsp oil and water in a pan.
Boil the pasts and strain it.
Heat butter in a pan.
Add onion and saute for 1 -2 mins.
Add oregano,all purpose flour/maida and black pepper powder and saute for one mins.
Add milk little by little.
Add pasta,cream and mozarella cheese.
Add salt and mix well.
Turn off the flame,garnish with cherry tomato and herbs.
Serve hot,

आम पापड़ /AAM PAPAD


सामग्री  /INGREDIENTS 

2 पका  आम  / 2  ripe  mango 
2 TSP  चीनी  / Sugar
1 /2  TSP  काला  नमक / black salt

 विधि

मिक्सर  में  आम  का  पल्प ,चीनी और काला  नमक  डाल 
 कर ब्लेंड  कर ले। 
पैन  में आम का पल्प ,चीनी  और  कला नमक  डाल  कर लगातार  चलायें 
10  मिनट तक कुक करे। 
प्लेट में डाल  कर  धुप  में सुखाय


METHOD
In a blender add mango pulp,sugar and black salt and blend it
In a pan add mango mixture and stir continously .
Stiring and cook for 10 mins.
Pour it in a plate and keep in the sun light /fan.

PINWHEEL SANDWICH


INGREDIENTS
Fresh bread                           -                                     4 slices
Boiled n mashed potato        -                                      1
Chopped onion                     -                                       1
Chopped green chilly           -                                       1
Chopped coriander leaves    -                                        1 tsp
Hot n sweet chilli sauce       -                                        1 tbsp
Green chutney                      -                                        1 tbsp
Grated cheese                       -                                        1 cube
Butter                                    -                                        1 cube

METHOD
All the ingredients mix in the mashed potato except chutney,sauce and cheese.
Cut the edges of the bread.
Spread the butter on the slices of the bread.
Add potato stuffing on the bread.
Another layer of the bread spread green chutney.
Third layer of the bread spread hot n sweet chilly sauce.
And fourth layer of the bread spread grated cheese.
Take cling paper and roll it all bread slices.
Keep in the fridge for half an hour.
Remove the cling paper.
Cut the bread into two pieces with the help of knife.
Serve it.

POI LEAVES FRITTERS


INGREDIENTS
Poi leaves                               -                                         6 - 8
Gram flour                             -                                         1/2 cup
Rice flour                               -                                         2 tbsp
Red chilly powder                  -                                        1/2 tsp
Turmeric powder                    -                                        1/2 tsp
Baking powder                        -                                       1/4 tsp
Salt                                          -                                        to taste
Oil                                           -                                       for frying

METHOD
Wash and clean poi leaves.
In a bowl combine all the ingredients with the help of little water.
Make a smooth batter.
Heat oil in a pan.
Deep the poi leaves into the batter.
Coat them well.
Fry the fritters golden n crispy.
Drain in paper napkin.
Serve hot with sauces.

CHICKEN 65


INGREDIENTS
Chicken                                           -                                  250 gms
Red chilly powder                           -                                   1 tsp
Turmeric powder                             -                                  1/2 tsp
Garam masala powder                     -                                  1/2 tsp
Hang curd                                        -                                  2 tbsp
Rice flour                                         -                                 2 tbsp
Cumin seeds/ jeera seeds                 -                                  1/4 tsp
Finely chopped garlic                      -                                   2 - 3
Garlic paste                                      -                                   1 tsp
Curry leaves                                     -                                   8 - 10
Curd                                                  -                                   1 tbsp
Sugar                                                -                                    1/4 tsp
Salt                                                   -                                     to taste
Green chilly                                     -                                      1 - 2

METHOD
Marinate chicken with red chilly powder,turmeric powder,garam masala,salt and hang curd.
Keep in the freeze for 45 mins.
Heat oil in a wok.
Add rice flour in the marinated chicken and deep fry all the chicken pieces till brown.
4 - 6 batch wise fry all the chicken pieces.
Flip it.
Again heat oil in a same pan.
Add cumin /jeera seeds to crackle.
Add chopped garlic and stir fry for one mins.
Add 8 - 10 curry leaves,green chilly and garlic paste and some water.
Add red chilly powder ,garam masala powder and curd.
Add sugar and salt and add some water.
Add chicken pieces into the gravy and mix well.
Garnish with curry leaves and green chilly.

MISSI ROTI




INGREDIENTS
Wheat flour    -  1 cup
Chickpea flour / besan    -  1 cup
Red chilly powder   -   1/2 tsp
Turmeric powder     -   1/2 tsp
Roasted cumin powder   -  1/2 tsp
Chopped green chilly     -  2
Chopped coriander leaves     -  1 tsp
Salt    -   to taste
Oil / butter   -    2 tbsp

METHOD
In a bowl take all the ingredients except oil.
Add little amount of water at a time and knead into a soft dough.
Keep aside for 15 mins.
Take some dough make into a big ball and roll out into a roti size.
Place the roti over the hot pan as soon as looks like brown.
Flip over and cook on the other side till brown.
Applying oil / butter on both the sides.
Take off the pan and serve hot.

BISCUIT SANDWICH





INGREDIENTS
Cumin / jeera biscuits     -   8 pieces
Grated mozzarella cheese  -   1/2 cup
Cottage cheese /paneer       -  1/2 cup
Chopped onion                   -  1
Chopped green chilly           -  2
Chopped coriander leaves    -  1 tsp
Butter                                     -  1 tsp
Salt                                      -   to taste

METHOD
Heat butter in a wok.
Add onion and fry till transparent.
Take a bowl combine mozzarella cheese,cottage cheese /paneer,fried onion,green chilly,coriander leaves and salt and mix well.
Now stuffing is ready.
Spread stuffing on the cumin / jeera biscuit.
Now cover this stuffed biscuit to another biscuit.
All the sandwiches make this way.
Serve immediately.

COTTAGE CHEESE / PANEER KACHORI





INGREDIENTS
Cottage cheese / paneer                             -                             100 gms
All purpose flour / maida                           -                              250 gms
Chopped onion                                           -                              1
Red chilly powder                                      -                               1/2 tsp
Chickpea flour                                            -                               1 tbsp
Coarsely grounded coriander seeds            -                               1/4 tsp
Coarsely grounded fennel seeds                 -                                1/4 tsp
Garam masala                                              -                               a pinch
Milk                                                             -                                1 cup
Baking powder                                            -                                1/4 tsp
Ghee / clarified butter                                  -                                1 tbsp
Salt                                                               -                                to taste
Oil                                                                -                                1 cup
 Chopped coriander leaves                           -                                1 tsp
METHOD
Heat 1 tbsp oil.
Add onion n saute till transparent.
Add chickpea / besan flour,fennel seeds,coriander seeds and mix well.
Add cottage cheese / paneer,red chilly powder,garam masala and salt and saute till dry the cottage cheese/ paneer.
Add coriander leaves and switch off the gas.
Now stuffing is ready.
In a bowl take all purpose flour / maida,salt ghee / clarified butter and baking powder and mix well.
Add little amount of milk at a time  and knead into a soft dough.
Keep aside for 15 mins.
Divide the dough into equal size balls.
Stuff the filling in the dough and roll into balls.
In a pan heat the oil and add the kachori lower the heat and fry till light brown.
Serve hot.

BANANA / KELE KA LADOO


INGREDIENTS
Mashed ripe banana      -    1 cup
Wheat flour           -   2 cup
Sugar powder           -   1 cup
Ghee / clarified butter         -   1 cup
Til / sesame seeds       -   2 tbsp
Grated coconut        -  2 tbsp
Cardamom powder     -    1/4 tsp

METHOD
Heat ghee / clarified butter in a wok.
Add wheat flower and stir fry continuously until golden brown.
Add til / sesame seeds and stir fry.
Add mashed banana and stir fry.
Add sugar powder.grated coconut and cardamom powder and mix well.
Switch off the gas and shape it into ladoo.
