PAV BHAJI

 


Prep Time : 15 mins
Cooking Time : 30 mins
Serve : 2

INGREDIENTS
Boiled potatoes - 4 - 5
Grated carrot - 1/2 cup
Grated cabbage - 1/2 cup
Chopped capsicum - 1/2 cup
Chopped onion - 1
Green peas - 1/2 cup
Chopped tomatoes - 2
Ginger, garlic paste - 1 tsp
Chopped green chillies - 2
Turmeric powder - 1/2 tsp
Red chilli powder - 1 tsp
Pav bhaji powder - 1 tsp
Salt - to taste
Oil - 2 tbsp
Butter - 1 tbsp
Chopped coriander leaves - 1 tbsp
Pav - 2

METHOD
Bhaji
Boil the potatoes in a pressure cooker. Peel and mash it..
Heat the oil in a wok.Add onion fry till light brown.Add ginger, garlic paste, red chilli powder,turmeric powder,green chillies add some water n saute.
Add tomatoes and cook on medium flame approax 4-5 mins.
Add the veggies and saute 2-3 minsNow add potatoes and mix well.
Add one cup of water and cook for 4-5 mins.Add salt, butter and pav bhaji masala and mix well..
Garnish with coriander leaves and serve.
Pav
Slice the pavs.Heat the pan grease some butter and place the pav in medium flame till golden brown.
Serve the pav with bhaji.











BLUEBERRY SHRIKHAND

 


Prep Time : 10 mins 

Cooking Time : 10 mins 
Serve : 4 

 INGREDIENTS 
Blueberry pieces - 1 cup 
Hung curd - 1 cup 
Mayonnaise - 2 tbsp
 Fresh cream - 1 tbsp 
Brown sugar - 1/2 cup 
Olive oil - 1 tbsp 
White pepper - 1/2 tsp 
Chat masala - 1 tsp
 Salt - to taste

 METHOD
 Hung the curd in a muslin cloth for 2 - 3 hours and then prepare shrikhand .
Beat the hung curd and add mayonnaise and cream. 
Add olive oil,sugar,white pepper ,chat masala,salt and mix well. Blend the blueberry and brown sugar to make a paste. 
 Add blueberry paste and mix well.
Garnish with blueberry, strawberry and mint leaves.
 Serve chilled.

GREEN GRAM AND POTATO SUBJI

 


Prep Time : 15 mins
Cooking Time : 15 mins
Serve : 2

INGREDIENTS-

Fresh green gram- 250 gms
Chopped potato - 1
Ginger garlic paste- 1 tbsp
Turmeric powder- 1 tsp
Mustard oil- 2 tbsp
Chopped onion- 2
Clove powder- small pinch
Pepper powder- small pinch
Red chilly powder- 1 tbsp
Cumin seeds- 1/2 tsp
Coriander powder- 1 tsp
Fresh coriander leaves- 100 gm
Chopped Green chilly- 2
Salt to taste


METHODS-

Heat oil in a pressure cooker add cumin seeds to crackle and  now add sliced onion and fry till it gets brown.
Add ginger garlic paste, coriander powder, red chilly powder, turmeric powder, pepper and cloves powder , salt and add little water in it and saute. 

Add fresh green gram and green chilly and 1 cup water  and cover the lid on high heat from 7-8 minutes and then simmer for 10minutes.
Add fresh coriander leaves. Serve hot











INSTANT DHOKLA

 


Prep Time- 10 mins
Cooking time- 15 mins
Serve- 4 to 6

INGREDIENTS
Gram flour/besan   -   1 cup
Semolina                  -  1 cup
Yogurt                       -  1 cup
Sugar                          - 2 tbsp
Salt                            -  to taste
Water                            -  1 cup
Oil                                 -  2 tbsp
Lemon juice                  -    1 tsp
Eno fruit salt                    -  1tbsp

For tempering
Black mustard seeds   - 1 tsp
Curry leaves         -       8 to 10
Green chillies        -        5 

Sesame seeds  - 1 tbsp

Oil                       -         1 tbsp


METHOD
In a bowl mix together gram flour, semolina, yogurt, sugar, salt,  lemon juice, oil and water to make a smooth paste.
Keep aside for 15 minutes.
Add eno fruit salt in the dhokla mixture just before making dhokla and mix well.
Pour the batter in a greased plate and steam it for 10 mins.
Heat oil in a pan for tempering and add mustard seeds ,sesame seeds ,curry leaves, green chillies.
Pour it over the dhokla and cut in cubes.






RAIL MUTTON CURRY

 


Prep Time : 15 mins
Cooking Time : 50 mins
Serve : 4

INGREDIENTS
Mutton pieces  -  500 gms
Sliced onion  -  5 onion
Ginger garlic paste  -  2 tbsp
Coriander powder  - 1 tsp
Red chilly powder  -  2 tsp
Turmeric powder  -  1/2 tsp
Garam masala powder  -  1 tsp
Kashmiri mirch powder  - 1 tsp
Chopped potato - 1 big size
Finely chopped tomato - 1
Fresh grated coconut - 1/4 cup
Tamarind water - 1/4 cup
Bay leaf - 1
Cloves  - 2 - 3
Cardamom  -  2
Cinnamon  -  1 inch stick
Black pepper  -  3 - 4
Salt  -  to taste
Clarified butter  -  2 tbsp
Mustard oil  -  1/2 cup

METHOD
Heat oil and clarified butter in a pressure cooker,add  bay leaf,cloves,cinnamon,cardamom and black pepper to crackle.
Add sliced onion and saute till light brown.
Now add mutton pieces and saute for five mins.
Now add ginger garlic paste and onion paste and cook for five mins.
Add mutton pieces and salt and cook on a high flame for five mins
Add coriander powder,red chilly powder ,turmeric powder and curd and mix well.
Cook in a slow flame for 10 mins.
Now add two cup of water and garam masala powder , chopped potato and  cover the lid and cook for ten mins or mutton becomes tender
Serve hot with rice .
