LETTUCE LEAVES SOUP

 


Prep Time : 15 mins
Cooking Time :25 mins
Serve : 4

INGREDIENTS
Chopped  lettuce - 500 gms
Olive oil - 2 tbsp
Garlic cloves - 2
Finely chopped coriander leaves - 1/2 cup
Vegetable stock - 1 cup
Water - 2 cup
Salt - to taste

METHOD
Heat olive oil in a pan add garlic cloves and coriander leaves and saute for few mins.
Add lettuce leaves and salt and  two cup of water and cook in a pressure cooker for five mins.
Turn off the flame.
Once cooled to add in the blender and make a paste
Take a pan add lettuce leaves, vegetables stock  and bring to boil.
Once boiled cook for five mins,add black pepper and mix well.
Serve hot.























ALOO BHAJIYA

 


Prep Time  : 10 mins
Cooking Time  : 15 mins
Serve : 2

INGREDIENTS
Aloo/potato  -  2 medium size
Red chilly powder  - 1/2 tsp
Turmeric powder  -  1/4 tsp
Garlic paste  - 1/2 tsp
Fenugreek seeds/methi seeds  -  a pinch
Green chilly  -  2
Salt  -  to taste
Oil  -  2 tbsp

METHOD
Peel wash and cut potatoes length wise.
Heat oil in a pan,add fenugreek seeds to crackle.
Add potato and stir fry on low flame for 4 - 5 mins.
Add turmeric powder,red chilly powder and garlic paste and mix well.
Add salt and green chilly n saute for 4 - 5 mins.
Let it cook on slow flame.
Serve with chapati .












MUSKMELON AND POMEGRANATE RAITA

Total Time : 10 mins 
Serve : 4

 INGREDIENTS
Pomegranate pearls - 1 bowl
Muskmelon - 1 bowl
Hung curd - 1 cup 
Salt- a pinch
Sugar- 1 tsp
Red chilly powder - 1/4 tsp 

 METHOD 
Put the fresh curd in a muslin cloth for 3-4 hours to make a hung curd and then prepare raita out of it. 
Whisk the hung curd. 
Add roasted and crushed cumin seeds, black salt, salt, red chilly powder ,sugar and mix well.
 Now after mixing it, add pomegranate pearls and chopped muskmelon and mix it well.
 Serve chilled pomegranate and muskmelon raita.

MUSKMELON AND GRAPES RAITA

Total Time : 10 mins 
Serve : 4

 INGREDIENTS
 Chopped green grapes- 1 bowl
Chopped black grapes - 1/2 bowl
Muskmelon - 1 bowl
Hung curd - 1 cup 
Salt- a pinch
Sugar- 1 tsp
Red chilly powder - 1/4 tsp 

 METHOD 
Put the fresh curd in a muslin cloth for 3-4 hours to make a hung curd and then prepare raita out of it. 
Whisk the hung curd.
