KURKURI BHINDI


Prep Time : 15 mins
Cooking Time : 25 mins
Serve : 4

INGREDIENTS
Bhindi - 250 gms
Turmeric powder - 1/2 tsp
Red chilly powder - 1 tsp
Coriander powder - 1 tsp
Cumin seeds powder - 1 tsp
Garam masala powder - 1 tsp
Amchur powder - 1/2 tsp
Gram flour - 1/2 cup
Rice flour - 2 tbsp
Salt - to taste
Oil - 1/2 cup

METHOD
Wash the bhindi and chop vertically,marinate the bhindi with all the spices and salt and mix well.
Add gram flour, rice flour and 2 tbsp oil and mix well.
Keep aside for an hour
Heat oil in a pan and deep fry the bhindi into three to four batches.
Fry the bhindi till golden brown and crisp on a medium flame.
Serve hot.









ANDHRA STYLE LAUKI KI SUBJI


Prep Time : 15 mins
Cooking Time : 25 mins
Serve : 2
Chopped lauki - 250 gms
Chopped potato - 1
Turmeric powder - 1/4 tsp
Salt - to taste
Whole red chilly - 2
Cumin seeds - 1 tsp
Clarified butter - 2 tbsp
Oil - 2 tbsp

METHOD
Wash and chop the lauki and potato
Heat oil in a pan add lauki and potato and saute for ten mins in medium flame.
Add salt and turmeric powder and mix well,
Add two cup of water and cover the lid and cook in a medium flame.
Add whole red chilly and mix well,turn off the flame.
Heat clarified butter in a pan,add cumin seeds to crackle and temper the lauki subji.
Serve hot with chapa

KHATTA MEETHA CHANA


Prep Time : 15 mins
Cooking Time : 25 mins
Serve : 2

INGREDIENTS
Kabuli chana - 1 cup
Imli pulp - 2 tbsp
Grated jaggery - 2 tbsp
Coriander powder - 1tsp
Cumin seeds powder - 1 tsp
Garam masala powder - 1 tsp
Chana masala powder - 1 tsp
Turmeric powder - 1/4 tsp
Red chilly powder - 1 tsp
Amchur powder - 1 tsp
Salt - to taste
Anardana 2 tsp
Clarified butter - 2 tbsp
Carom seeds - 1 tsp
Cumin seeds - 1 tsp
Green chilly - 2
Chopped tomato - 2

METHOD
Soak chana over night and boil in a pressure cooker with two cup of water,once cooled reserve the water.
Take a bowl add kabuli chana,red chilly powder,turmeric powder,garam masala powder,chana masala powder,amchur powder,cumin seeds powder,coriander powder and salt and mix well.
Crushed the anardana.
Heat clarified butter in a pan,add cumin seeds, carom seeds and green chilly
 to crackle
Add kabuli chana and mix well,add crushed anardana,imli pulp and grated jaggery and mix well.
Add reserve kabuli chana water, chopped tomato and one cup of water and bring to boil.
Once boiled cook for five mins and turn off the flame.

WHEAT CHILLA


Prep Time :15 mins
Cooking Time : 15 mins
Serve : 2

INGREDIENTS
Wheat flour  -  2 cup
Almond powder  -   2 tbsp
Cardamom powder  -  1 tsp
Grated jaggery  -  30 gms
Milk  -  2 cup
Clarified butter  -  1/2 tbsp

METHOD
Take a bowl add grated jaggery,wheat flour,two tbsp clarified butter,cardamom powder,almond powder and mix well
Add milk little by little and make smooth batter.
Keep aside for fifteen mins
Heat clarified butter in a pan ,add one spoon batter  and spread it.
Drizzle one tsp clarified on it and cover the pan
Flip it and cook both the sides.
Serve hot .

MALAIDAR LAUKI CHANA DAL

Cooking Time : 30 mins
Serve : 4


INGREDIENTS
Chana dal / bengal gram     -  2 cup
Finely chopped bottle gourd / lauki     -  250 gms
Finely chopped onion       -  2 medium size
Red chilly powder       -  1/2 tsp
Turmeric powder       - 1/2 TSP
Cumin seeds    -    a pinch
Clarified butter     -    50 gms
Fresh cream - 1/4 cup
Green chilly - 1
Finely chopped ginger      -  1 tsp
Garam masala powder      -  1/4 tsp
Asafoetida / hing    -  a pinch
Salt       -   to taste

METHOD
Wash and chop lauki into small pieces and also wash the chana dal
Take a pressure cooker add chana dal.lauki,salt,turmeric powder and three cup of water and pressure cook,after one whistle simmer the flame and cook for ten mins.
Heat butter in a pan.
Add cumin seeds,asafoetida/hing to crackle.
Add onion and fry till light pink.
Add red chilly powder,ginger,garam masala powder,green chilly and 2 tbsp water.
Add bottle gourd / lauki and  chana dal and mix well.
Add fresh cream and mix well
Garnish with coriander leaves
