STRAWBERRY CHUTNEY

Prep Time : 15 mins Cooking Time : 15 mins Serve :6 INGREDIENTS Strawberry - 250 gms Sugar - 250 gms Salt - 1/2 tsp Lemon juice - 1 tbsp Chilly flakes - 1/4 tsp Roasted cumin seeds - 1 tsp METHOD Wash and chop the strawberry Take a bowl add chopped strawberry,sugar,salt and lemon juice and mix well. Keep aside for two hours. Add strawberry and cook in a lower flame until sugar mix well and thick Add chilly flax and roasted cumin seeds and mix well. Turn off the flame.

STRAWBERRY ORANGE SMOOTHIE

Prep Time : 15mins
Total Time : 15 mins
Serve : 2 

 INGREDIENTS 
Strawberry - 1 cup 
Chopped orange - 1 
Black salt - 1/2 tsp

 METHOD
 Wash and chop the strawberry and orange. Take a blender add orange and strawberry and blend to make smooth Serve chilled.

WALDORF SALAD

Prep Time : 25 mins Total Time : 25 mins Serve : 2 INGREDIENTS Mayonnaise - 1/2 cup Lemon juice - 1 tbsp White pepper - 1/4 tsp Salt - to taste Sugar powder - 1 tsp Apple - 2 cut in cubes Grapes - 1/2 cup Raisins(optional) - 1/2 cup Walnut - 1/2 cup METHOD Take a large bowl whisk together mayonnaise and lemon juice. Add white pepper,salt and sugar powder and mix well. Wash the apple cut in cubes. Wash and cut the grapes in half. Dry roast the walnuts. Add apple cubes,grapes,raisins and walnut in mayonnaise and mix well. Serve chilled

ALOO MATAR PURI

Prep Time : 15 mins
 Cooking Time : 15 mins
 Serve : 2

 INGREDIENTS
 Wheat flour - 1 cup
 Suji - 1/2 cup
 Maida - 1/2 cup
 Carom seeds / ajwain - 1/4 tsp
 Salt - to taste
 Oil - for frying
 Water - as required
 For the filling
 Boiled potatoes - 4
 Boiled green peas - 1 cup
 Ginger garlic paste - 1 tsp
 Chopped green chilly - 2
 Red chilly powder - 1 tsp
 Turmeric powder - 1/2 tsp
 Cumin seeds - a pinch
 Salt - to taste
 Oil - 1 tsp
 Chopped coriander leaves - 1 tsp

 METHOD
 Take a bowl add wheat flour,suji,maida,carom seeds,salt and oil and mix well.
 Add little water at a time and knead into a soft dough.
 Keep aside for 15 mins
. Peel and mash the boiled potatoes and peas
 Heat oil in a pan. Add cumin seeds to crackle.
 Add mashed potatoes,mashed green peas ,red chilly powder,turmeric powder,salt,green chilly and coriander leaves and mix well.
 Saute for 4 - 5 mins
. Now stuffing is ready
. Divide the dough into equal size balls.
 Stuff the filling in the dough and roll into balls
. In a pan heat the oil and add the puri lower the heat and fry till light brown.
 Serve hot.

SUJI KACHORI

Prep Time : 10 mins 
Cooking Time : 30 mins
 Serve : 2

 INGREDIENTS
 Suji - 1 cup
 All purpose flour - 1/2 cup
 Wheat flour - 1/2 cup
 Clarified butter - 1 cup
 Salt - to taste
 Carom seeds - 1/4 tsp
 Onion seeds - 1/4 tsp
 Oil - for frying

 METHOD 
Take a large bowl add suji,all purpose flour,wheat flour, carom seeds,onion seeds and salt and mix well. Add little by little water to make a dough.
 Cover this dough with muslin cloth and keep aside for 30 mins.
 Roll out the dough in a round shape.
 Heat enough oil in a pan and deep fry the kachori on a low flame till golden brown and crispy.
 Drain in paper napkin.
 Serve hot with aloo,baingan tamator ki subji.

POMEGRANATE RAITA

Prep Time : 15 mins Total Time : 15 mins Serve :2 INGREDIENTS Curd - 1 cup Pomegranatepearls - 1/2 cup Biack salt - 1 tsp Roasted cumin seeds - 1 tsp Red chillie powder - a pinch Sugar - 1 tsp METHOD Beat the curd till smooth. Season with black salt, sugar, red chilly powder and roasted cumin seeds. Add anardana and mix well. Serve chilled

GARLIC GREEN LACCHA PARATHA WITH GARLIC CHICKEN

Prep Time : 25 mins Cooking Time : 50 mins Serve : 2 INGREDIENTS FOR GREEN GARLIC LACCHA PARATHA Wheat flour - 1 cup Finely chopped green garlic leaves - 1 cup Carom seeds - 1/4 tsp Onion seeds - 1/4 tsp Clarified butter - 2 tbsp for kneading the dough Clarified butter - 2 tbsp Salt - to taste Chilly flakes For garlic chicken Chicken pieces - 500 gms Chopped onion - 3 onion Ginger - 1 inch stick Garlic cloves - 15 Cloves - 5 - 6 Green cardamom - 3 - 4 Black cardamom - 2 Whole black pepper - 5 - 6 Wholered chilly - 5 Coriander seeds - 1 tbsp Turmeric powder - 1/4 tsp Kashmiri mirch powder - 1 tsp Red chilly powder - 1 tsp Thick curd - 1/2 cup Lemon juice - 2 tsp Bay leaf - 2 Salt - to taste Oil - 4 tbsp METHOD For green garlic laccha paratha Take a mixing bowl combine wheat flour,,cumin seeds,onion seeds ,salt,and two tbsp clarified butter and mix well. With the help of water make a soft dough. Divide the dough into four parts. Roll out dough into thin chapati spread clarified butter on it. Now dust the dry flour and spread the green garlic leaves and chilly flakes and cut from one side and roll out paratha. On a heated pan make paratha applying oil on both the sides. Serve hot with garlic chicken. For garlic chicken Wash and clean chicken pieces and marinate with turmeric powder,red chilly power, salt and lemon juice and keep aside for 30 mins Take a blender add ginger garlic cloves,green and black cardamom,cloves,whole black pepper and whole red chilly red chilly and blend coarsely. Heat oil in a pan,add bay leaf and chopped onion and cook in a high flame for five mins. now add chicken pieces and cover it and cook in a high flame for five mins. Add masala paste,kashmiri mirch powder and mix well. Now add thick curd and mix well,cover it and cook for ten mins in low flame. Garnish with coriander leaves and serve hot with laccha paratha.

COCONUT BURFI

Prep Time : 30 mins 
Cooking Time : 20 mins 
Serve : 10

 INGREDIENTS
 Grated dry coconut - 1.5 cup 
Mawa - 1/2 cup
 Jaggery - 500 gms
 Clarified butter - 4 tbsp 
Cardamom powder - 1 tsp
 Crushed cashew nuts - 2 tbsp 

 METHOD 
Heat one tbsp clarified butter in a pan now add grated coconut and saute for 2 to three mins. Now add mawa and mix well.
 Heat Jaggery and two tbsp clarified butter in a pan on high flame Cook for 7 - 8 mins until jaggery syrup is thick
 Add grated coconut and mix well
 Cook for 8 - 10 mins till thick consistency
 Add cardamom powder and one tbsp clarified butter and mix well. 
Spread on the grease plate and spread crushed cashew nuts over it. 
Once cooled cut into diamond shape.
