SARSO KA SAAG



Prep Time : 15 mins
Cooking Time : 60 mins
Serve  : 4

INGREDIENTS
Wash and chop mustard leaves  -  1 kg
Wash and chop spinach leaves   -  300 gms
Maize flour/makki ka atta  -  2 tbsp
Butter  -  150 gms
Ginger  - 1 inch stick
Tomato - 2
Green chilly - 2 - 3
Salt  -  to taste

METHOD
Wash and chop mustard leaves and spinach leaves
Boil in a pressure cooker with one cup of water
Once cooled, to blend in the blender.
Heat butter in a pan.
Add makka flour fry for two to three mins and strain it
 Make the paste of tomato,green chilly and ginger.
Heat clarified  butter in a pan add tomato paste and saute for 4 - 5 mins ,now add sarso saag abd mix well.
Add salt and cook for 4 - 5 mins
Serve with makke ka paratha.

MUTTON PULAO


Prep Time : 25 mins
Cooking Time : 45 mins
Serve : 4

INGREDIENTS
Mutton - 500 gms
Finely chopped onion - 3
Garlic cloves - 4 - 5
Ginger chopped - 1 tsp
Whole black pepper - 4 - 5
Cinnamon - 1 inch stick
Cloves - 4 - 5
Black cardamom - 1
Green cardamom - 2
Whole cumin seeds - 1 tsp
Coriander powder - 1 tsp
Red chilly powder - 1 tbsp
Turmeric powder - 1/2 tsp
Salt - to taste
Oil  - 4 tbsp
Curd - 1/2 cup
Basmati rice - 2 cup
Clarified butter - 2 tbsp
Green chilly cut in slit

METHOD
Heat oil in a pressure cooker, add whole garam masalsa to crackle.
Add sliced onion,garlic and ginger and saute until transparent.
Add mutton pieces and mix well.
Add coriander powder,red chilly powder and turmeric powder and pressure cook for ten mins
Once cooled add curd and salt and mix well ,stir occasionally  on full flame till water absorb it and mutton is fully cooked.
Soak rice flour for half  and strain it
Heat clarified butter in a pan ,add rice and saute for 4 - 5 mins
Now take a rice cooker add fried rice,mutton pieces,salt and five cup of water and steam it.
Serve hot.

VEGETABLE CREPES


Prep Time  :25 mins
Cooking Time  : 15 mins
Serve : 2

INGREDIENTS
All purpose flour / maida       -     1 cup
Milk  -  1 cup
Finely chopped capsicum - 2 tbsp
Finely chopped carrot - 2 tbsp
Finely chopped tomato - 2 tbsp
Salt - to taste
Oregano - 1 tsp
Black pepper powder - 1/4 tsp
Grated cheese - 50 gms
Oil  -  4 tbsp

METHOD
Take a large bowl add all above listed ingredients except oil and mix well.
Heat oil in a non stick pan.
Spread the mixture.
Drizzle one tsp oil in it
Flip when done on one side.
Serve hot with tomato sauce and green chutney
