INGREDIENTS
Eggplant / baingan - 1 small size
Curd - 1 bowl
Finely chopped onion - 1 small size
Finely chopped green chilly - 1
Finely chopped coriander leaves - 1 tbsp
Finely chopped mint leaves - 1 tsp
Salt - to taste
Sugar - 1/2 tsp
Oil - 2 tbsp
METHOD
Wash and cut eggplant / baingan in small pieces
Heat oil in a pan,add onion and saute 1 - 2 mins
Now add eggplant / baingan and saute till they are golden and cooked.
Whisk the curd,add salt ,sugar and roasted cumin seeds and mix well
Add eggplant / baingan,coriander leaves,mint leaves and green chilly in the curd and mix well
Serve chilled
