GAJAR HALWA SWISS ROLL

 


Preparation time- 20 minutes
Cooking time- 1 hour
Serve : 6

INGREDIENTS
Chopped carrot     -  1 kg
Milk   -    1/2 kg
Sugar    -   500 gms
Mawa    - 250 gms
Fresh malai    -   1 cup
Cardamom powder    -   1 tsp
Crushed cashew nuts     -   2 tbsp
Raisins       -    2 tbsp


METHOD
Wash, peel and chop the carrots
. Pressure cook the chopped carrots and milk.
 When cooker release the whistle turn off the flame. Once cooled, open the lid.
Simmer the flame and stir continuously till it gets thick
. Add  malai and sugar and mix well and stir continuously until ghee leave the pan.
Add cardamom powder, raisins and cashew nuts and mix well
. Take mawa and sugar in a pan and saute. until thick.
Grease the plastic sheet and spread the mawa dough and on the top spread the  gajar halwa and roll it tightly .
Wrap in the plastic sheet and keep in the fridge for an hour.
Cut the pieces and serve.
