DRY POTATO SUBJI

Cooking Time : 15 mins
Serve : 4

INGREDIENTS
Boiled potatoes - 250 gms
Finely chopped onion - 1
Whole red chilly - 3
Thick curd - 2 tbsp
Fresh cream - 2 tbsp
Crushed whole coriander seeds  - 1 tbsp
Crushed whole cumin seeds - 1 1 tbsp
Amchur powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Green chilly - 1 cut in slit
Salt - to taste
Oil - 4 tbsp
Finely chopped coriander leaves - 1 tbsp
Kashmiri mirch powder - 1/2 tsp
Ginger garlic powder - 1 tsp

METHOD
Wash and boil the potatoes in a pressure cooker with one cup of water
Once cooled peel the skin and fry in a pan
Keep aside.
Dry roast the coriander seeds,cumin seeds and whole red chilly and make a powder or crush it
Deep fry the finely chopped onion and strain it.
Heat oil in a pan,add ginger garlic paste and saute for one mins.
Add fried potato,fried and crushed onion,crushed and roasted whole red chilly,whole cumin seeds,whole coriander seeds,garam masala powder,turmeric powder,kashmiri red chilly powder and mix well.
Also add fresh cream and curd and mix well
Add salt and green chilly and mix well.
Cover it and cook in a low flame for five mins.
Garnish with green coriander leaves.
Serve hot with chapati
