LAUKI MAKHNI

Serve : 4

INGREDIENTS
Lauki - 1 medium size
Finely chopped green chilly - 2
Finely chopped coriander leaves - 1 tbsp
Finely chopped ginger - 1 tsp
Whole black pepper - 8
Cumin seeds - 1 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 1 tbsp
Red chilly powder - 1/2 tsp
Crushed fennel seeds - 1 tsp
Garam masala powder - 1/2 tsp
Amchur powder - 1/2 tsp
Salt  -  to taste
Curd - 2 tsp
Cream - 1 tsp
Clarified butter - 1 tbsp
Butter - 2 tbsp

METHOD
Wash,peel chop lauki in pieces.
Heat clarified butter in a pressure cooker in a medium heat.
Add cumin seeds and whole black pepper to crackle.
Add ginger and green chilly and mix well.
Add lauki pieces and fry for few minutes.
Add coriander powder,turmeric powder,red chilly powder and crushed fennel seeds and mix well.
Add butter and one tbsp water and close the cooker lid.
Cook in a medium flame,after one whistle turn off the flame.
Once cooled,add amchur powder,garam masala powder and curd and mix well.
Add cream and coriander leaves and serve hot with chapati.
