ACHARI BHINDI / LADIES FINGER


Prep Time : 10 mins
Cooking Time : 20 mins
Serve : 4

INGREDIENTS
Chopped ladies finger / bhindi        -       1 bowl
Chopped onion   -  1          
Curd - 2 tbsp            
Coriander powder      -   1 tsp
Red chilly powder      -   1 tsp
Turmeric powder    -  1/2 tsp
Black mustard seeds            -         1/4 tsp
Fennel seeds / sauf       -         1/4 tsp
Onion seeds          -     1/4 tsp
Fenugreek seeds / methi dana     -       1/4 tsp
Asafoetida         -    1/4 tsp
Roasted cumin seeds powder    -         1/2 tsp                 Salt  -  to taste
Sugar         -       1/2 tsp
Mustard oil    -               4 tbsp

METHOD
Heat 2 tbsp oil in a pan.
Add bhindi / ladies finger and cook cover in a  slow flame till tender.
In other pan heat 2 tbsp oil.
ADD Black mustard seeds,fennel seeds,onion seeds,fenugreek seeds/ methi seeds and asafoetida / hing to crackle.
Add onion and stir fry for 1 - 2 mins.
Add coriander powder,red chily powder,turmeric powder,roasted cumin seeds powder and 2 tbsp of water and mix well.
Add tomato and curd and stir fry for 1 - 2 mins.
Add fried bhindi / lady fingers,salt and sugar and cook for two to three mins.
Serve hot with rice.
