BHAKRI Gujarati Recipe


Prep Time  : 15 mins
Cooking Time  : 10 mins
Serve  : 4

INGREDIENTS
Wheat flour   -   1/2 bowl
Makka /maize flour  -  1/2 bowl
Gram flour  -  1/2 bowl
Bajra flour  -  1/2 bowl
Finely chopped onion  -  1/2 bowl
Finely chopped green chilly  -  1 tsp
Red chilly powder  -  1/2 tsp
Cumin seeds   -  1/2 tsp
Turmeric powder   -  1/2 tsp
Salt  -  to taste
Oil  -   4 tbsp

METHOD
Take a bowl add wheat flour,gram flour,bazra flour,maize flour,salt,red chilly powder,turmeric powder,onion,green chilly ,cumin seeds and 2 tbsp oil and mix well.
Make a stiff dough with the help of water.
Keep rest for 15 mins.
Divide the dough into equal size balls.
And roll out each ball into a round thick chapati.
On a heated pan make bhakri,applying oil on both the sides.


TANGRI KABAB


Prep Time  : 3 - 4 hours
Cooking Time  - 20 mins
Serve  - 5

INGREDIENTS
Chicken leg pieces     -   5
Red chilly powder     -   1/2 tsp
Turmeric powder    -  1/2 tsp
Garam masala powder  -  1 tsp
Roasted gram flour  -   2 tbsp
Finely chopped green chilly  -  1 - 2
Lemon juice  -  2 tsp
Hung curd  -  2 tbsp
Ginger garlic paste  -  1 tbsp
Corn flour   -  1 tsp
Corn flax   -  1/2 bowl
Oil   -  1 cup

METHOD
Wash and marinate chicken leg pieces with ginger garlic paste,hung curd,red chilly powder,turmeric powder,corn flour,roasted gram flour,lemon juice,salt and finely chopped green chilly.
Keep in the freezer for 3 - 4 hours.
Coat the leg pieces with corn flax.
Heat oil in a pan.
Deep fry the leg pieces until golden in colors.
Always cook in medium flame.
Drain extra oil.
Serve hot.

MAGIC ICE CREAM


Prep Time  : whole night
Cooking Time  : whole night
Serve : 2

INGREDIENTS
Ripe banana  -  2
Peanut butter  -  2 tbsp

METHOD
Sliced the ripe banana.
Keep in the freezer for whole night.
Churn it.
Add peanut butter and again churn it.
Enjoy with family.

TINDA GOSHT


Prep Time  : 15 mins
Cooking Time  : 45 mins
Serve  : 4

INGREDIENTS
Mutton pieces   -   500 gms
Sliced onion  -  2 big size
Onion paste   -  2 big size
Finely chopped tomato  -  2
Tinda   -   250 gms
Garam masala powder   -  1 tsp
Coriander powder  -  1 tsp
Turmeric powder  -  1/2 tsp
Red chilly powder  -  1 tsp
Kashmiri mirch powder  -  1/2 tsp
Ginger garlic paste  -   1 tsp
Salt  -  to taste
Oil   -  1 cup

METHOD
Heat oil in a pan.
Add sliced onion and stir fry till brown.
Add onion paste,ginger garlic paste,coriander powder,red chilly powder,turmeric powder,kashmiri mirch powder and 2 tbsp water and stir fry till oil leaves the pan.
Add tomato and mutton pieces and mix well.
Add salt and two cup of water and cover it.
Cook for 30 mins in low flame.
Add tinda and garam masala powder and mix well.
Cover it and cook for 10 mins. in low flame.
Add coriander leaves and mix well.
Serve hot with rice or chapatis.

CHANDRAKALA


Prep Time  : 30 mins
Cooking Time  : 25 mins
Serve  : 2

INGREDIENTS
All purpose flour / maida     -   1 cup
Mawa / whole dried milk     -  3/4 cup
Sugar  -  1 cup
Water  -  1 cup
 Cardamom powder  -   1/2 tsp
Grated coconut   -   2 tbsp
Crushed cashew nuts  -   2 tbsp
Raisins  -  2 tbsp
Clarified butter / ghee  -   2 tbsp
Oil  -  for frying

METHOD
Heat the pan add mawa / whole dried milk  on a medium flame.
When its color change in light brown switch off the gas.
Once cooled,add coconut ,raisins,cashew nuts and cardamom powder.
Now stuffing is ready.
For the covering
Take a bowl mix all purpose flour and clarified butter.
Knead to make a soft and smooth dough with the help of little amount of water.
Keep aside for 15 mins.
Divide the dough into equal size balls and roll out each ball into a round puri.
Stuff the mawa / whole dried filling in it.
And cover with other puri and  seal the edges with water and shape it.
Heat oil in a pan and deep fry these chandrakala until golden in colors.
Always cook in medium flame.
Drain extra oil.
For syrup
Now prepare the sugar syrup of one string consistency.
Dip into the sugar syrup for ten mins.




GREEN CHILLY CHOKHA / HARI MIRCH KA CHOKHA


Prep Time  : 5 mins
Cooking Time : 5 mins
Serve  : 2

INGREDIENTS
Whole green chilly    -  4 - 5
Chopped garlic clove  -  3 - 4
Salt  -  to taste
Mustard oil  -  4 - 5 drops

METHOD
Roast green chilly on a gas flame and mash it.
Add chopped garlic,salt and mustard oil and mix well.
Serve with rice or chapatis.

RAVA DOSA


Prep Time  : 15 mins
Cooking Time  : 10 mins
Serve  : 2

INGREDIENTS
Wheat flour    -  1 tbsp
Rava / suji   -  3 tbsp
Rice flour  -   2 tbsp
All purpose flour  -  2 tbsp
Chopped onion  -  2 tbsp
Choped green chilly  -  1/4 tsp
Chopped ginger  -  1/2 tsp
Cumin seeds  -  1/4 tsp
Curry leaves  -  4 - 5
Coriander leaves  -  1 tbsp
Sal  -  to taste
 Oil  -  2 tbsp

METHOD
Take a bowl add wheat flour,rava,rice flour,all purpose flour and salt and mix well.
Add one cup of water and make dosa batter.
Add green chilly,onion,ginger,cumin seeds,curry leaves and coriander leaves and mix well.
Rest for 10 - 20 mins.
Heat oil in a non stick pan.
Add one tbsp dosa batter and spread it.
Drizzle one tsp oil.
Flip it and cook both the sides.
Serve hot.
