ACHARI ALOO PARWAL

Serve : 4

INGREDIENTS
Parwal  -  200 gms
Potato   3 sliced
Thinly sliced onion - 1
Tomato paste - 1 tomato
Onion seeds - 1 tsp
Turmeric powder - 1/4 tsp
Amchur powder - 1/2 tsp
Hing - 1/4 tsp
Cumin seeds - 1 tsp
Mustard seeds - 1/2 tsp
Fennel seeds - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Coriander powder - 1 tsp
Whole red chilly - 2
Salt - to taste
Oil - 2 tbsp
Coriander leaves - 1 tbsp

METHOD
Dry roast the cumin seeds,fennel seeds,mustard seeds,onion seeds,fenugreek seeds,coriander powder,hing and whole red chilly.
Once cooled,to make a powder.
Wash and cut the potato and parwal
Heat oil in a pressure cooker,add 1/2 tsp onion seeds and onion and fry until dark brown.
Add potato and parwal and saute for 4 - 5 mins.
Add turmeric powder,amchur powder and tomato and mix well.
Add dry roasted powder and 2 tbsp water and mix well.
Cover the lid in a high flame.
After two whistle turn off the flame.
Once cooled,add salt and saute for 4 - 5 mins in simmer.
Garnish with coriander leaves and serve hot.
