All purpose flour / maida  -  1 cup
Salt -  to taste
Clarified butter  -  1 tbsp
Carom seeds  - a pinch
Onion seeds  -  a pinch
Oil  -  for frying
For stuffing
Roasted gram flour  -  4 tbsp
Roasted sesame seeds  -  1/2 tsp
Red chilly powder  -  1/2 tsp
Asafoetida /hing  -  a pinch
Sugar  -  1/4 tsp
Sauf powder /fennel seeds powder  - 1/2 tsp
Amchur powder  -  1/2 tsp
Hot oil  -  1 tbsp
Salt - to taste

Dry roast the besan / gram flour and also dry roast the sesame seeds.
Add hing/asafoetida,amchur powder,red chilly powder,coarsely ground fennel seeds powder,salt,sugar and one tbsp hot oil and mix well.
Now stuffing is ready.
Take a large bowl add all purpose flour,clarified butter,salt,carom seeds an d onion seeds and mix well.
With the help of water make a soft dough.
Keep aside for 30 mins.
Divide the dough into equal size balls.
Stuff the filling in the dough ball and roll into balls.
In a pan heat the oil and add the kachori,lower the heat and fry till light brown.
Drain in paper napkin serve hot.
