MANGO MALAI BURFI


Prep Time : 10 mins
Cooking Time : 10 mins
Serve : 6

INGREDIENTS
Ripe mango - 2
Sugar - 4 tbsp
Milk - 1 cup
Paneer - 200 gms
Mawa - 100 gms
Crushed almonds - 1 tbsp
Crushed cashew nuts - 1 tbsp
Raisins - 1 tbsp
Green cardamom powder - 1 tsp

METHOD
Wash and chop mangoes into small pieces and blend to make a paste.
Heat mango puree and  2 tbsp sugar until thick considtency.
Add mawa and cook for 5 - 6 mins until thick,now the base is ready
We mashed the paneer very well and make a soft and smooth dough.
Boil  milk till it reduced to half and then add paneer and 2 tbsp sugar powder and mix well.
Stir continuously for 8 - 10 mins then switch off the gas.
Add cardamom powder and mix well.
Grease the plate and firstly pour the mango mixture and spread on the plate now transfer the malai layer over the mango mixture garnish with crushed almonds,crushed cashew nuts and raisins
Set half an hour in the fridge .
Cut into diamond shape and serve it.













MURGH KALIMIRCH

Cooking Time : 35
Serve : 3

INGREDIENTS
Chicken leg pieces  - 500 gms
Whole black pepper - 8 - 10
Green cardamom - 2 - 3
Black cardamom - 2
Cloves - 5 - 6
Red chilly powder - 1 tbsp
Turmeric powder - a pinch
Ginger garlic paste - 1 tbsp
Cumin seeds - 1 tbsp
Clarified butter - 4 tbsp
Mozzarella cheese - 2 tbsp
Lemon juice - 1

METHOD
Take a blender add whole black pepper,cloves,cardamom powder,cumin seeds,ginger garlic paste,red chilly powder, and one tbsp water and ground coarsely
Add lemon juice,pinch of turmeric powder and salt in this paste and mix well.
Marinate chicken with this paste and keep aside for 3 - 4
Grease the oven tray  with oil and place the marinated chicken leg pieces and sprinkle some cardamom powder,cloves powder and black pepper powder put the butter over it
Preheat oven and cook for 25 mins in 250 degree c
When cook on one side  turn the side and again sprinkle some cardamom powder,cloves powder and black pepper powder and put butter spread the grated   cheese on it and cook for ten mins.
Serve hot with chapatis.

KALI MIRCH DUM PANEER


Prep Time : 15 mins
Cooking Time : 15 mins
Serve : 2

INGREDIENTS
Paneer - 200 gms
Chopped onion - 1
Garlic cloves - 3
Ginger - 1 inch stick
Chopped green chilly - 1
Cashew powder - 1 tbsp
Coriander powder - 1 tsp
Fresh cream - 1 tbsp
Milk - 1 cup
Black pepper powder - 1/4 tsp
Garam masala powder - 1/2 tsp
Black cardamom - 1
Green cardamom - 1
Cloves - 2
Cinnamon - 1 inch stick
Salt - to taste
Clarified butter - 3 tbsp
Coriander leaves - 1 tsp

METHOD
Heat clarified butter in a pan,add onion,ginger garlic and saute until transparent.
Once cooled to make a paste,again heat clarified butter in the same pan
Add whole garam masala to crackle now add fried masala paste.
Add coriander powder and mix well.
Add milk and cashew nut powder and bring to boil.
Add paneer pieces,fresh cream and garam masala powder and cook for five mins.
Add salt and mix well.
Garnish with coriander leaves and green chilly.














AAM PAPAD


Prep Time :15 mins
Cooking Time : 15 mins
Serve : 4

सामग्री  /INGREDIENTS 

2 पका  आम  / 2  ripe  mango 
2 TSP  चीनी  / Sugar
1 /2  TSP  काला  नमक / black salt


 विधि

मिक्सर  में  आम  का  पल्प ,चीनी और काला  नमक  डाल 
 कर ब्लेंड  कर ले। 
पैन  में आम का पल्प ,चीनी  और  कला नमक  डाल  कर लगातार  चलायें 
10  मिनट तक कुक करे। 
प्लेट में डाल  कर  धुप  में सुखाय

METHOD
In a blender add mango pulp,sugar and black salt and blend it
In a pan add mango mixture and stir continously .
Stiring and cook for 10 mins.
Pour it in a plate and keep in the sun light /fan for two days
