JAGGERY / GUR GATTA


Prep Time  : 10 mins


Cooking Time  :15 mins
Serves  :4

INGREDIENTS
Grated jaggery / gur                       -                   1 bowl
Clarified butter / ghee                    -                    1/2 tsp
Eno fruit salt                                   -                   1/2 tsp
Baking soda                                    -                   1/2 tsp
Crushed almonds                            -                   1 tbsp

METHOD
Heat clarified butter / ghee in a pan
Add jaggery / gur and stir continuously till gur melt it and color will be changed and carmalize it.
Add eno fruit salt and baking soda and mix well
When gur starts foaming switch off the gas..
Grease the plate and pour it.
After two hours cut in diamond shape.
Garnish with almonds.

BENGAL GRAM / CHANA DAL MATHRI


Prep Time  : 15 mins
Cooking Time  : 20 mins
Serves  : 2

INGREDIENTS
Rice flour                                      -                                   1 cup
Soaked bengal gram / chana dal  paste    -                        1 tbsp
Ginger paste                                  -                                   1/2 tsp
Curry leaves paste                         -                                   1/2 tsp
Green chilly paste                          -                                   1/2 tsp
Butter                                             -                                   1 tbsp
Salt                                                 -                                   to taste
Oil                                                  -                                   for frying

METHOD
Take a bowl combine rice flour,wet chana dal paste and mix paste of ginger,curry leaves and green chilly and mix well.
Then add salt and butter and make a dough with some sprinkles of water.
Now take a small ball of dough in palm n press it gently also not very thick.
Then deep fry in hot oil in sim flame.
Enjoy with tea and coffee.

GRAPES PAYESH / ANGOORI KHEER


Prep Time  : 20 mins
Cooking Time : 40 mins
Serves  : 4

INGREDIENTS
Milk                                   -                             5 cup
Grapes / angoor                 -                             1 bowl
Custard powder                 -                             1 /2 tsp
Condensed milk                 -                            2 tbsp
Green cardamom powder  -                             1/4 tsp
Sugar                                 -                             4 tbsp
Crushed almonds              -                              1 tbsp
Raisins                              -                              1 tbsp

METHOD
Boil milk in a heavy bottom vessel.
Once boiled ,keep it on a low flame and stir occasionaly for thickening the milk.
Add sugar and mix well.
Remove the skin of the grapes and add in the milk..
Take 1/2 tsp custard powder add into a hald cup of cold milk and mix well.
Add this milk into the grapes payesh.
After 5 - 7 mins it gets thick consistency.
Add cardamom powder and condensed milk and mix well.
Garnish with crushed almonds and raisins.
Serve chilled.

GAJAR HALWA IN MICROWAVE


Prep Time  : 15 mins
Cooking Time  : 20 mins
Serves  : 4

INGREDIENTS
Grated carrot / gajar                       -                           500 gms
Sugar                                              -                           3/4 cup
Whole dried milk / mawa              -                            1 cup
Clarified butter / ghee                    -                            3 tbsp
Green cardamom                           -                             1/4 tsp
Roughly chopped almonds            -                             1 tbsp
Roughly chopped cashew nuts      -                             1 tbsp
Raisins                                           -                             1 tbsp

METHOD
Take a large microwave proof  bowl add carrot,clarified butter / ghee and green cardamom powder and mix well.
Microwave in high for 7 - 8 mins.
Add sugar and mix well and microwavebin high for 5 mins,
Stir in between.
Add almonds ,cashew nuts, raisins and whole dried milk / mawa and microwave in high for 3 - 4 mins.
Stir in between.
Garnish with raisins.

SWEET CORN SOUP


Prep Time  : 10 mins
Cooking Time  : 15 mins
Serves  : 2

INGREDIENTS
Sweet corn                                           -                                     half cup
Water                                                    -                                    2 cup
White pepper                                        -                                    1/2 tsp
Corn flour                                             -                                    1/2 tsp
Butter                                                    -                                    1 tsp
Chopped carrot                                     -                                    2 tsp
Chopped beans                                     -                                    2 tsp
Chopped brocolli                                  -                                    2 tsp
Chopped onion                                     -                                    2 tsp
Salt                                                       -                                    to taste

METHOD
Heat butter in a pan.
Add chopped onion and saute for one mins.
Add sweet corn and stir fry for 2 - 3 mins.
Add salt,white pepper and all the veggies and stir fry for 2 - 3 mins.
Add corn flour in half cup of water and mix well and add in the pan.
Add 2 cup of and boil for 8 - 10 mins.
Serve hot.

EGG / ANDA PARATHA






Prep Time  : 25 mins
Cooking Time  : 15 mins
Serves  : 2

INGREDIENTS
Wheat flour                                      -                                100 gms
All purpose flour / maida                 -                                100 gms
Cashew nuts powder                        -                                10 cashew
Almonds powder                              -                                10 almonds
Boiled eggs                                       -                                3
Milk                                                  -                                1 cup
Cardamom powder                           -                                1/4 tsp
Salt                                                    -                                to taste
Chopped coriander leaves                 -                                1 tsp
Oil                                                     -                                 4 tbsp

METHOD
Take a bowl add wheat flour,all purpose flour and salt and mix well.
With the help of milk knead a dough.
Keep aside for 30 mins.
After 30 mins knead it again.
Grate the boiled eggs.
Add almonds powder,cashew nuts powdder,cardamom powder,coriander leaves and salt and mix well.
Now stuffing is ready.
Flatten the balls into round thick paratha.
Take another ball and flatten into thick round patatha.
Stuff the egg filling and cover with another paratha.
Grease a pan with little oil and heat on a medium flame.
Anda / egg paratha is ready to eat.

PEANUTS AND FRUIT SALAD


Prep Time  : 15 mins
Cooking Time : 5 mins
Serves  : 2

INGREDIENTS
Boiled peanuts                                -                             4 tbsp
Pomegranate seeds                         -                            1/4 cup
Chopped apple in cubes                 -                            1/2 cup
Chopped green chilly                     -                            1/2 tsp
Chopped coriander leaves              -                            1 tsp
Black salt                                        -                            1/2 tsp
Salt                                                  -                            to taste
Sugar                                               -                            1/2 tsp
Lemon juice                                    -                            1 tsp

METHOD
Take a bowl add all listed ingredients and mix well.
Serve chilled.

GOBI METHI PARATHA




Prep Time  : 25 mins
Cooking Time  : 20 mins
Serves : 4

INGREDIENTS
Wheat flour                             -                               3 cup
Salt                                          -                               to taste
Oil                                           -                               4 tbsp
Grated cauliflower                  -                               1 cup
Finely chopped methi             -                               1 cup
Ginger paste                           -                               2 tsp
Green chilly paste                  -                               2 tsp
Red chilly paste                      -                              1 tsp
Turmeric powder                    -                              1/2 tsp
Coriander powder                   -                              1/2 tsp
'Gram flour / besan                 -                              1/4 cup
Roasted mango powder / amchur  -                      1 tsp
Cumin seeds                             -                           a pinch
Black mustard seeds                 -                          a pinch'
Asafoetida                                -                          a pinch
METHOD
Take a bowl add wheat flour,salt and oil and mix well.
With the help of water knead a dough.
Keep aside for 30 mins.
Heat one tsp oil in a pan.
Add asafoetida,black mustard seeds,cumin seeds to crackle.
Add cauliflower,green chilly paste and ginger paste and saute for 2 - 3 mins.
Add methi leaves and red chilly powder,turmeric powder,coriander powder,gram flower,roasted mango powder and salt and mix well.
Cook well for 3 - 4 mins.
Now stuffing is ready.
Flatten the balls into round thick paratha.
Take another ball and flatten the ball into round thick paratha.
Stuff the gobi and methi filling and cover with another paratha.
Grease a pan with little oil and heat on a medium flame.
Gobi methi paratha is ready to eat.
Serve garma garam paratha.

MUGLAI CHICKEN PULAO


Prep Time  : 30 mins
Cooking Time : 25 mins
Serves  : 4

INGREDIENTS
Chicken                                             -                             800 - 900
Basmati rice                                      -                             2 cup
Hot water                                          -                             4 cup
Chopped onion                                 -                              4 medium
Whole red chilly                               -                              4 - 5
Cloves                                              -                               2 - 3
Green cardamom                              -                               2 - 3
Cinnamon                                         -                               1 inch stick'
Mace                                                -                                1 piece
Black cardamom                              -                                1
Ginger garlic paste                           -                                2 tsp
Cumin seeds                                     -                                1/2 tsp
Bay leaf                                            -                                2 - 3
Mint leaves                                      -                                 1/2 cup
Chopped green chilly                      -                                  1 - 2
Garam masala powder                    -                                   a pinch
Chopped coriander leaves               -                                   1  tsp
Oil                                                    -                                   1/2 cup
Salt                                                   -                                   to taste

METHOD
Heat oil in a pan.
Add whole garam to crackle.
Add onion and fry till light brown.
Add ginger garlic paste and mix well.
Add chicken pieces and salt and fry for 7 - 8 mins on medium flame.
When color of the chicken pieces are light brown add rice and mint leaves and green chilly and m,ix well.
Add four cup of hot water and cover it and cook 15 mins on medium flame.
Add a pinch garam masala and switch off the gas.
Garnish with coriander leaves and serve.

SUJI MAIDA KE SHAKKARPARE


Prep Time  20 mins
Cooking Time  : 20 mins
Serves  : 4

INGREDIENTS
All purpose flour /maida                          -                               2 cup
Sooji                                                         -                               1 cup
Powdered sugar                                        -                               one and half cup
Hot water                                                  -                               1/2 cup
Clarified butter / ghee                               -                               1/4 cup
Green cardamom                                       -                               1/4 cup
Oil                                                              -                              for frying

METHOD
Take a bowl add warm water in sugar powder n let it put for sometime.
Sugar will disolve in water.
When sugar disolved add sooji and all purpose flour in a bowl.
Now add melted clarified butter in it.
With the help of sugar water we will make a dough.
Dough should be hard.
Keep aside for 30 mins.
Make a thisk round chapati from dough and cut in desired shape.
Make all para n put them in room temperature for 30 mins.
Now heat oil in a pan.
Oil should not be too hot.
Fry all para in small batches on medium flame.

BOTTLE GOURD / LAUKI AND RICE FLOUR KHEER


Prep Time   : 30 mins
Cooking Time : 25 mins
Serves  : 4

INGREDIENTS
Milk      -   5 cup
Grated bottle gourd / lauki    -  250 gms
Rice flour     -  50 gms
Sugar       -  4 tbsp
Whole dried milk / mawa    -  2 tbsp
Green cardamom     -  1/4 tsp
Roughly chopped cashew nuts     -  1 tsp
Roughly chopped almonds  -  1 tsp
Clarified butter / ghee      -   1 tsp
Rose water   -  1 tsp

METHOD
Heat clarified butter in a pan.
Add bottle gourd / lauki and saute for 5 - 6 mins.
Add milk and cook in a low flame for 10 - 15 mins.
Add rice flour in 1/2 cup of water and add in the milk.
Add whole dried milk / mawa in the milk.
Add sugar and mix well.
Add cardamom powder and roughly chopped cashew nuts ,almonds and rosr water and mix well.
Garnish with cashew nuts and almonds.

BURANI RAITA


Prep Time  : 10 mins.
Cooking Time : 10 mins
Serves  : 2

INGREDIENTS
Curd      -   1 cup
Chopped garlic  - 2 - 3 cloves
Red chilly powder     -  1/4 tsp
Roasted cumin seeds powder -     1/4 tsp
Black salt -  1/4 tsp
Salt   -   to taste
Oil  -  1/2 tsp

METHOD
Beat the curd.
Sprinkle red chilly powder,roasted cumin seeds powder,black salt and salt and mix well.
Heat oil in a pan.
Add garlic and fry till brown.
Add into the raita
Serve chilled

METHOD
Basmati rice    -   1 cup
Sweet corn      -  1/2 cup
Chopped onion    -  1 small size
Ginger garlic paste  - 1 tsp
Whole black pepper  -   2
Cloves     -   2
Cinnamon   - 1 inch stick
Green cardamon  -  2
Black cardamom   -  1
Cumin seeds  -  1/4 tsp
Cashew nuts      -   1 tbsp
Clarified butter   -  2 tbsp
Salt   -  to taste

METHOD
Heat clarified butter / ghee in a pan.
Add whole garam masala to crackle.
Add cashew nuts and fry it.
Add onion and saute for 2 - 3 mins.
Add ginger garlic paste and sweet corn and saute for 3 - 4 mins.
Soak rice in water for 15 mins and strain it.
Add rice and mix well.
Add salt and two cup of water.
Once boiled,keep on the low flame and cover it for 10 mins.
Serve with raita.

SAI BHAJI sindhi recipe


Prep Time  : 25 mins
Cooking Time : 20 mins
Serves  : 2

INGREDIENTS
Chopped spinach                                -                                         3 cup
Chopped onion                                   -                                         1 medium
Chopped bottle gourd / lauki              -                                         2 tbsp
Chopped carrot                                   -                                         2 tbsp
Chopped potato                                  -                                         2 tbsp
Chopped tomato                                 -                                         1
Turmeric powder                                -                                         1/2 tsp
Red chilly powder                               -                                        1/2 tsp
Chana dal / bengal gram                      -                                        1/4 cup
Ginger garlic paste                               -                                        1/2 tsp
Salt                                                       -                                        to taste
Oil                                                        -                                        2tbsp

METHOD
Wash and soak chana dal for two hours.
Wash and chop spinach finely.
Chopp all veggies in a vessel.
Add all ingredients.
Pressure cook for 15 mins.
Once cooled,mix well and mash it.
Heat oil in a pan.
Add ginger garlic paste and saute for one mins.
Add in the spinach and chana dal and mix well..
Serve hot with chapaties.

GUAVA /AMRUD KI CHUTNEY


Prep Time  : 10 mins
Cooking Time :5 mins
Serves  : 4

INGREDIENTS
Seedless chopped guava / amrud  - 1 cup
Chopped coriander leaves  -   1/2 cup
Black salt - 1/2 tsp
Black pepper powde  -  a pinch
Chopped green chilly -  2
Ginger  -  1 inch stick
Lemon juice   -   1 tsp
Salt -   to taste
Mustard oil   -   4 - 5 drops

METHOD
Blend all the ingredients to a smooth consistency.
Add oil and serve.

PALAK ALOO KA PARATHA


Prep Time  : 20 mins
Cooking Time  : 15 mins
Serves  : 2

INGREDIENTS
Boiled spinach                                  -                                 1/2 cup
Wheat flour                                       -                                 1 cup
Salt                                                    -                                  to taste
Clarified butter / ghee                       -                                  2 tbsp
For stuffing
Boiled and grated potatoes                -                                1/2 cup
Red chilly powder                             -                                1/2 tsp
Finely chopped onion                        -                                1 medium size
Finely chopped green chilly              -                                1/2 tsp
Finely chopped coriander leaves       -                                1 tsp
Carom seeds / ajwain                         -                                a pinch
Lime juice                                          -                                 1 tsp
Salt                                                     -                                  to taste

METHOD
Take a bowl add wheat flour,boiled palak / spinach and salt.
Knead to make a soft dough.
Keep aside for fifteen mins..
Make an equal size balls.
Stuff the filling in the dough and roll into balls.
Flatten the balls into thick round parathas.
Grease a pan with little clarified butter / ghee and heat on a medium flame.
Palak aloo ka paratha is ready to eat.

GUAVA /AMRUD KI SUBZI

INGREDIENTS
Guava / amrud                               -                                 3 - 4
Curd                                               -                                 2 tbsp
Sauf                                                -                                 1 tsp
Cumin seed powder                       -                                 1 tsp
Roasted mango powder                 -                                 1 tbsp
Salt                                                -                                  to taste
Oil                                                 -                                  2 tbsp

METHOD
Remove the seeds of the guava / amrud and chop it.
Heat oil in a pan.
Add curd and fry it.
Add all the spices.
Add roasted mango powder / amchur and guava / amrud pieces and cook forr ten mins.
