GAJAR HALWA IN PRESSURE COOKER

 


Preparation time- 20 minutes
Cooking time- 1 hour
Serve - 10

INGREDIENTS
Chopped carrot     -  2.5 kg
Milk   -    1 kg
Sugar    -   500 gms
 ghee     -   1 cup
Cardamom powder    -   1 tsp
Crushed cashew nuts     -   2 tbsp
Raisins       -    2 tbsp
Almonds - 2 tbsp


METHOD
Wash, peel and chop the carrots
. Pressure cook the chopped carrots and milk.
 When cooker release the whistle turn off the flame. Once cooled, open the lid.
Simmer the flame and stir continuously till it gets thick
. Add   ghee and sugar and mix well
. When the mixture (carrot and milk) gets dried, add carda   mom powder,raisins,cashew nuts ,almonds and saute for 4-5 minutes.
Garnish with cashew nuts and raisins and  serve hot.















DATES AND BISCUITS BURFI

 


Prep Time  : 10 mins
Cooking Time : 15 mins
Serve : 4

INGREDIENTS
Dates  -  20  - 25
Grated coconut  -  2 tbsp
Poppy seeds  -  2 tbsp
Chopped cashew nuts  -  1 tbsp
Chopped almonds  -  1 tbsp
Chopped walnuts  -  1 tbsp
Raisins  - 1 tbsp
Pista - 1 tbsp
Digestive biscuits - 10 - 12

METHOD
Dry roast all dry nuts in a medium flame.
In the same pan dry roast grated coconut and keep it aside.
In the same pan dry roast the poppy seeds and keep it aside.
Add the digestive biscuits into the blender and blend it.
Remove the seeds  and finely chop the dates.
Take the dates in a pan till soft.
Turn off the flame.
Add all dry nuts,raisins,poppy seeds and grated coconut and mix well
Now add digestive biscuits powder and mix well..
Pour the mixture into greased plate and cut into diamond shape..




















CHERRY AND CHOCOLATE CAKE

Cooking Time : 45 mins
Serve : 10


INGREDIENTS
Maida -250 gm
Sugar powder -250 gm
Eggs -3
Cocoa powder  - 2 tbsp
Baking  powder - 1 tsp
Baking soda - 1 tsp
Vanilla extract -1 tsp
Salt -a little  pinch
Unsalted butter -1 cup
Cherry - 10 - 12

METHOD
Preheat oven to 180 degree C.
 Grease and flour a 9 inches round baking cake pan.
 In the bowl, beat the butter and sugar powder Now beat  the eggs in the blender .
 Add the vanilla extract  and mix well.
Sieve the maida,cocoa powder,baking powder,baking soda and salt.
 Add the flour in cut and fold method,and now add cherry
  And then pour the batter into greased dish.
  Bake for 45 minutes in the preheat microwave oven in conviction mode.
Now the delicious chocolate cake is ready,garnish with sugar powder,chocolate syrup and cherry.

















GREEN GARLIC PANEER PARATHA

 


Prep Time : 25 mins
Cooking Time : 15 mins
Serve : 2

INGREDIENTS
Wheat flour - 1 cup
Salt  - to taste
Onion seeds - 1/4 tsp
Carom seeds - 1/4 tsp
Clarified butter - 1 tbsp for kneading the dough
Clarified butter - 2 tbsp
For stuffing
Grated paneer  - 1 cup
Green garlic leaves  -  1 bowl
Finely chopped onion - 1
Grated ginger and green chilly  -  1 tsp
Green coriander leaves - 2 tbsp
 Crushed carom seeds  -  1/4 tsp
Crushed onion seeds  - 1/4 tsp
Salt  -  to taste


METHOD
Take a large bowl combine all the above listed stuffing ingredients
Now stuffing is ready.
Take a large bowl combine wheat flour,carom seeds,onion seeds,1 tbsp clarified butter and salt and mix well.
Make a soft dough with the help of water.
Keep aside for fifteen mins.
Divide the dough into balls stuff  one tbsp paneer stuffing into the ball
Seal the edges and roll out.
On a heated pan make paratha applying clarified butter on both the sides.
Serve hot






GUR TIL KI BURFI

 


Prep Time : 15 mins
Cooking Time : 15 mins
Serve : 8

INGREDIENTS 
Til - 1 cup
Gur - 1/2 cup
Mawa - 1/2 cup
Pista  - for garnishing

METHOD
Dry roast the til and strain it,once cooled half of the til blend in the blender 
Heat mawa in the pan and roast for few mins now add gur and mix well in low flame.
After thick consistency add powder til and some roasted til and mix well.
Pour the mixture into grease plate and garnish with roasted til and pista.
Once cooled cut into diamond shape.
