MINI FRIED IDLY

Prep Time : 15 mind
Cooking Time : 15 mins
Serve : 2

INGREDIENTS
 Mini idli - 18
 Black mustard seeds - 1 tsp
 Asafoetida - 1/4 tsp
 Ginger garlic paste - 1 tsp
 Turmeric powder - 1/4 tsp
 Red chilly powder - 1 /2 tsp
 Salt - to taste
 Lemon juice - 2 tsp
 Oil - 2 tbsp
 Coriander leaves - 1 t bsp
 Chopped onion - 1
Curry leaves - 10

 METHOD
 Heat oil in a pan.
 Add asafoetida,curry leaves and black mustard seeds to crackle.
 Add onion n saute for one mins.
 Add ginger, garlic paste and stir fry for 2 to 3 mins
. Add mini idlies and saute for one mins.
 Add red chilly powder turmeric powder and one tbsp water and mix well.
 Now add salt and lemon juice and saute for 2 to 3 mins.
 Garnish with coriander leaves .
 Serve hot with green chutney and tomato sauce.

RAVA CRISPY DOSA

Prep Time : 15 mins 
Cooking Time : 20 mins 
Serve : 2 

 INGREDIENTS 
 Suji / rava - 1 cup 
Rice flour - 1 cup 
Curd - 1/2 cup 
Red chilly powder - 1/4 tsp 
Salt - to taste 
Oil - 2 tbsp 
To temper 
Finely chopped onion - 1 small 
Finely chopped green chilly - 1 
Mustard seeds - 1/4 tsp 
Oil - 2 tbsp 

 METHOD 
. Add curd,suji.rice flour,salt,red chilly powder and one cup of water and grind them to a smooth batter. It should be pouring consistency. 
Heat oil in a pan and temper the above listed ingredients. 
Add this temper mixture in the batter and mix well. 
Heat oil in a pan. 
Now spread a laddle full of batter evenly and cover it 
Drizzle some oil and cook until its golden brown. 
Cook other side as well. 
Serve hot with garlic chutney and green chutney

ONION PARATHA

Prep Time : 20 mins

Serve : 2

 INGREDIENTS
 Wheat flour - 1 cup
 Finely chopped onion - 1 cup
 Coriander powder - 1 tsp
 Chilly flakes - 1 tsp
 Carom seeds - a pinch
 Onion seeds - a pinch
 Salt - to taste
 Chopped green chilly - 1
 Curd - 2 tsp
 Oil - 2 tbsp
Butter - 1 cube

 METHOD
 Wash and chop onion and mix coriander powder, salt,green chilly,carom seeds,onion seeds,chilly flakes,green coriander leaves and mix well
 Onion are mixed in a wheat flour with salt,curd,green chilly,carom seeds,onion ,turmeric powder, red chilly powder and one tbsp oil to make a soft dough with the help of a water.
 Now stuffing is ready.
 Take a large bowl add wheat flour,curd and salt and mix well.
 With the help of water to make a soft dough.
 Divide the dough into equal size balls
. Stuff the filling in the dough and roll out paratha
. On a heated pan make paratha applying clarifing butter on both the sides.
 Serve hot with butter

MEXICAN CHEESY QUESADILLA

Prep Time : 30 mins Cooking Time : 3o mins Serve : 2 INGREDIENTS All purpose flour - 1 cup Salt - to taste Clarified butter - 2 tbsp for kneading the dough Chopped onion - 1 Sweet corn - 1/2 cup Chilly flax - 1/2 tsp Black pepper powder - 1 tsp Herbs - 1 tsp Hot and sweet tomato chilly sauce - 4 tbsp Clarified butter - 4 tbsp Mozzarella cheese - 1 cup grated.
Green coriander leaves - 2 tbsp METHOD Take a mixing bowl combine all purpose flour salt and clarified butter and mix well. With the help of water make a soft dough. Cover it and keep aside 30 mins Divide the dough into four parts. Roll out dough into thin chapati. Make Chapati on the heated pan. Boil the sweet corn for five mins. Grate the mozzarella cheese Take a bowl add mozarella cheese,sweet corn,green coriander leaves,onion,chilly flakes,herbs,black pepper and salt and mix well. Now your stuffing is ready. Take one chapati spread one tbsp hot and sweet tomato chilly sauce now add grated cheese and sweet corn mixture and cover with grated cheese and fold the Chapati. Cook on a heated pan spread clarified butter on it. Flip over and cook on the other side.Cut into halves Now Mexican cheesy quesadilla is ready to eat .

POTATO MAYONNAISE SANDWICH

Prep Time : 15 mins Cooking Time : 10 mins Serve : 2 INGREDIENTS Bread - 4 slice Boiled peas - 1/2 cup Finely chopped onion - 1 Turmeric powder - 1/4 tsp Mayonnaise - 50 gms Boiled n mashed potato - 2 Chilly flakes - 1 tsp Oregano - 1 tsp Salt - to taste Black pepper powder - 1/4 tsp Butter - 50 gms Oil - 2 tbsp METHOD Heat oil in a pan add onion and saute until pink now add boiled peas and mix well. Add potatoes,turmeric powder,chilly flakes,oregano,black pepper powder and salt and mix well. Turn off the flame. Take a bread slice spread the mayonnaise and now add potato and peas mixture. Cover this stuffed slice with other slice. Grease with butter and place the sandwich on medium flame and grill it. Spread the butter both the sides get golden brown. Cut into two pieces. Serve hot with tomato ketchup and green chutney

BOONDI RAITA

Prep Time : 10 mins Total Time : 10 mins Serve : 4 INGREDIENTS Boondi - 1/2 bowl Hung curd - 1 cup Roasted n crushed cumin seeds - 1/2 tsp Black salt- 1/4 tsp Salt- a pinch
Sugar- 1 tsp
Red chilly powder - 1/4 tsp Chopped coriander leaves- 1 tsp METHOD Put the fresh curd in a muslin cloth for 3-4 hours to make a hung curd and then prepare raita out of it. Whisk the hung curd. Add roasted and crushed cumin seeds, black salt, salt, sugar and mix well. Now after mixing it, add boondi and coriander leaves into it. Serve chilled boondi raita with biryani.

LITTI CHOKHA

Prep Time :25 mins
Cooking Time : 30 mins
 Serve : 4

 INGREDIENTS
 For litti
 Wheat flour - 1 cup
 Suji - 1/2 cup
 Carom seeds - a pinch
 Onion seeds - a pinch
Baking powder - 1/4 tsp
 Salt - to taste
ghee - 2 tbsp for kneading the dough
 ghee - 1 cup
 For stuffing
 Roasted gram flour/sattu - 100 gms
 Finely chopped onion - 2 tbsp
 Finely chopped green chilly - 1/4 tsp
 Finely chopped garlic cloves - 1/2 tsp
 Mustard oil - 1 tbsp
 Salt - to taste
Lemon juice - 1 tsp
 Chopped coriander leaves - 1 tbsp
 Water - 4 tbsp

 For chokha
 Bharta baingan  - 1 large
 Tomato - 1 Chopped
 onion - 1 Chopped
 green chily - 2
 Chopped garlic cloves - 3 - 4
 Salt - to taste
 Chopped coriander leaves - 1 tbsp

 METHOD
 For litti
 Take a large bowl add wheat flour,suji,baking powder,carom seeds,onion seeds,salt and 2 tbsp clarified butter and mix well.
 Make a stiff dough with the help of water.
 The texture should be crumbly keep aside for 30 mins.
 Take a large bowl add above listed stuffing ingredients and mix well.
 Now stuffing is ready.
 Divide the dough into equal size balls.
 Stuff the filling in the dough.
 Wrap up the dough pieces and close from all sides.
 Take appe patra grease with  ghee,add litti and cover it and cook for 3 - 4 mins.
 Flip it and pour amul ghee and cook it over little brown,turn off the flame serve hot.
 Deep into the  ghee and serve hot. with baingan bharta
 For baingan bharta
 Wash and clean the baingan
Stalk trimmed and partially slit into quarters and prick the baingan
 Now keep in the microwave safe bowl Microwave baingan for six mins and tomato for 3 mins
 Cool down for some time,remove the skin of the baingan and tomato and mash it
 Add green chilly,garlic cloves,coriander leaves,salt and finely chopped onion in the mashed baingan tomato and mix well.
Garnish with coriander leaves

BREAD PUDDING

Prep Time :25 mins 
Cooking Time : 15 mins 
Serve : 5 

 INGREDIENTS 
Milk - 2 cup 
Crushed almonds - 1 tbsp 
 Custard powder - 2 tsp
 Sugar - 2 tbsp 
Milk rusk - 6 - 8
 Crushed almonds - 1 tbsp 
Cherry jelly - for garnishing 

 METHOD 
  
Heat one cup of milk in a heavy bottom vessel once boiled keep it in a low flame and add milkmaid and mix well. Turn off the flame. 
Take one cup of milk and sugar and mix well and now dip the rusk into the milk. 
Take a milk rusk and layer into a shallow serving dish cover with milkmaid mixture.
 Repeat the process with the final layer of milkmaid mixture. 
Keep in the refrigerator for 4 - 5 hours. 
Serve the bread malai pudding with garnish of crushed pistachios and crushed almond.

CHEESY GARLIC PULL APART BURGER

Prep Time : 45 mins 
Cooking Time : 15 mins 
Serve : 2 

 INGREDIENTS 
Burger bun - 2 
Grated cheese - 1/2 cup 
Chilly flakes - 1/2 tsp 
Herbs - 1 tbsp 
Black pepper powder - 1/4 tsp 
Butter - 4 tbsp 
Sweet corn - 2 tbsp 
Mayonnaise - 2 tbsp
Finely chopped garlic pods - 2 
Chopped coriander leaves - 1 tbsp 

 METHOD 
Take a bowl add butter and grated garlic an,d mix well 
 Cut the burger in a top and spread garlic butter in the bun. 
Now take a bowl add mayonnaise black pepper powder,herbs,chilly flakes,coriander leaves and sweet corn and mix well. 
Stuff this filling in the cut marks of bun
At the top add the grated cheese.
Now bake for five mins.
Now your pizza burger is ready to eat.
Serve hot.













MIX VEG PAKORA

Prep Time : 15 mins
Cooking Time : 15 mins
Serve : 2

 INGREDIENTS
 Chopped cabbage - 1 cup
Chopped onion - 1/2 cup
Chopped green chilly - 1
Chopped coriander leaves - 1 tbsp
,carom seeds - 1/4 tsp
,onion seeds - 1/4 tsp
 Gram flour - 1/2 cup
 Rice flour - 1/2 cup
 Red chilly powder - 1/2 tsp
 Turmeric powder - 1/2 tsp
 Salt - to taste
 Oil - for frying

 METHOD
 Wash all the veggies. Cut the cabbage, onion ,green chilly and coriander leaves.
 Mix the dry ingredients with gram flour and rice flour and mix well with the help of little water
. Heat the oil in a pan.
 Deep fry the pakora golden and crispy.
 Drain in paper napkin.
 Serve hot with tea.
