DHUSKA KI SUBJI Jharkhand recipe

Cooking Time : 30 mins
Serve : 4

INGREDIENTS
For dhuska
Basmati rice -1/2 cup
Chana dal - 1/4 cup
Urad dal - 1/4 cup
Cumin seeds -1/4 tsp
Salt - to taste
Water - 1/2 cup
Finely chopped coriander leaves - 1 tbsp
Oil - for frying
For curry
Chopped onion  -  1/2 cup
Ginger - 1 inch stick
Garlic cloves  - 4 - 5
Cumin seeds - 1/2 tsp
Red chilly powder - 1 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 1 tsp
Kashmiri mirch powder - 1/2 tsp
Cardamom   -  1
Black pepper  -  3 - 4
Cloves - 2 - 3
Cinnamon - 1 inch stick
Salt - to taste
Oil - 4 tbsp
Green coriander leaves - 1 tbsp

METHOD
Wash and soak basmati rice and  chana and urad dals for 3-4 hours and grind to make a thick paste with the help of little water
The batter should be thick and smooth
Now add the cumin seeds,coriander leaves and salt
Heat enough oil for deep frying.
Now pour one spoon of batter in the hot oil and cook on medium flame till the color is lightly brown,then turn it over another side and drain in paper napkin.
For curry
Heat oil in a pan add cumin seeds to crackle.
Take a blender add chopped onion,ginger garlic,cloves,black pepper,cinnamon,cardamom and cumin seeds to make a fine paste.
Now add onion masala paste and saute for 4 - 5 mins.
Add coriander powder,red chilly powder,turmeric powder and kashmiri mirch powder and 2 tbsp water and mix well.
Add two cup of water and cover the lid cook in a slow flame for 5 mins
Now add fried dhuska and  cook for five mins
Garnish with coriander leaves and serve.
