BOTTLE GOURD /LAUKI AND CHANA DAL / BENGAL GRAM

Lauki aur chane ki dal
INGREDIENTS
Chana dal / bengal gram     -  2 cup
Finely chopped bottle gourd / lauki     -  250 gms
Finely chopped onion       -  2 medium size
Red chilly powder       -  1/2 tsp
Turmeric powder       - 1/2 TSP
Cumin seeds    -    a pinch
Butter     -    50 gms
Milk      -   1/4 cup
Bay leaf          - 1 - 2
Finely chopped ginger      -  1 tsp
Garam masala powder      -  1/4 tsp
Ginger garlic paste        -  1 tsp
Asafoetida / hing    -  a pinch
Salt       -   to taste

METHOD
Heat butter in a pan.
Add cumin seeds,asafoetida/hing ,ginger and bay leaf and fry it.
Add onion and fry till light pink.
Add turmeric powder,red chilly powder,ginger garlic paste,garam masala powder and 2 tbsp water.
Add milk little by little and milk bottle gourd / lauki and mix well.
Add chana dal / bengal gram, salt and lauki / bottle gourd in a preesure cooker.
Add 1 cup of water and pressure cook.
After one whistle simmer the gas for 10 mins.
Garnish with coriander leaves and butter.

MILK CAKE




INGREDIENTS
Khoya /mawa                                      -                                          200gms
Cottage cheese / paneer                       -                                         150 gms
Sugar                                                    -                                         2 tbsp
Cardamom powder                              -                                         a pinch
Ghee / clarified butter                          -                                         1 tbsp

METHOD
Take a bowl,mix mawa ,paneer / cottage cheese and sugar crumbling with hands.
Put non stick pan on medium flame and add the mawa,cottage cheese / paneer and sugar.
Stir continuously for 2 - 3 mins,it starts leaving sides.
Now add ghee / clarified butter and stiring continuously for 2 - 3 mins till light brown.
Pour into plate and cut in a diamond size.

DAHI KE KABAB




INGREDIENTS
Fresh hang curd      - 1 cup
Roasted chickpea flour  / besan   -  2 tbsp
Bread crumb    - 1/2 cup
Chopped green chilly  -  2
Chopped coriander leaves  -   1 tsp
Red chilly powder   -  1/4 tsp
Salt   -   to taste
Oil     -   2 tbsp

METHOD
Take a bowl combine all the ingredients except oil and  bread crumb and mix well.
Shape each ball to flat patties of medium thickness.
Coat them with bread crumb.
Shallow fry in hot oil until golden in color.
Flip in once in between.
Always cook in medium flame.
Serve hot with tea.

SOOJI TOAST


INGREDIENTS
Bread                                        -                              4 slices
Diced onion                              -                               1 small
Diced capsicum                        -                               1
Grated carrot                            -                               2 tbsp
Black pepper powder               -                               a pinch
Sooji                                         -                               1 cup
Curd                                          -                               1/4 tsp
Chopped green chilly                -                               2
Chopped coriander leaves         -                               1 tbsp
Salt                                            -                               to taste
Oil / butter                                 -                               2 tbsp

METHOD
Take a bowl add sooji,curd,capsicum,carrot,onion,green chilly,coriander leaves ,salt and half cup of water and mix well.
Spread the batter on the top of the bread.
Heat non stick pan on a gas and grease some oil / butter in a medium flame.
Place the bread over the hot pan as soon as like brown.
Flip over and cook on the other side till brown.
Take off the pan and serve hot sooji toast with tea.

FRIED ICE CREAM SANDWICH





INGREDIENTS
Vanilla ice cream                              -                                    1 scoop
Marie biscuit                                     -                                    2
All purpose flour / maida                  -                                    2 tbsp
Suji / semolina                                   -                                    2 tbsp
Salt                                                     -                                    to taste

METHOD
Spread ice cream over marie biscuits.
Now cover this stuffed biscuit to another biscuit.
Take a bowl add all purpose flour,salt,and water and mix well.
Make a smooth batter.
Dip the biscuit ice cream in this batter and coat them with suji / semolina.
Fry the ice cream sandwich golden n crispy.
Drain extra oil.
Serve hot or cold as you like it.

INSTANT RAVA DOSA


INGREDIENTS
All purpose flour / maida    -  1 cup
Rava / suji   - 1/2 cup
Rice flour  -  1/2 cup
Curd  -  1/4 cup
Salt    -  to taste
Oil   -  2 tbsp
For tempering
Mustard seeds       -   1/4 tsp
Cumin seeds      -  1/4 tsp
Urad dal / lentil   -    1/2 tsp
Chana dal /lentil      -   1/2 tsp
Chopped green chilly   -   2
Chopped onion    - 1 medium size
Curry leaves      -   8 - 10
Asafoetida / hing       -    a pinch
Oil     -    1 tbsp

METHOD
Heat oil in a pan.
Add asafoetida / hing,mustard seeds,cumin seeds,curry leaves,chana dal /lentil,urad dal / lentil and green chilly.
After one mins add onion and fry till transparent.
Switch off the gas.
In a bowl mix rava,rice flour,all purpose flour / maida,salt and water.
Make a smooth batter.
Batter is not so thick.
Add fried ingredients to the batter.
Heat non stick pan to very hot.
Sprinkle some oil till it sizzles and quickly pour a large spoon of batter on it.
Flip when done on one side.
Enjoy rava dosa with coconut chutney.

MUTTON PASANDA


INGREDIENTS
Mutton                                             -                                    500 gms
Chopped onion                                -                                      4
Ginger garlic paste                          -                                      1 tsp
Turmeric powder                             -                                      1 tsp
Red chilly powder                           -                                      2 tsp
Coriander powder                            -                                      1 tsp
Ghee / clarified butter                      -                                      1 tbsp
Cumin powder                                 -                                       1/2 tsp
Whole garam masala                       -                                       1 tsp
Garam masala powder                     -                                       1/2 tsp
Vinegar                                            -                                       1 tsp
Salt                                                   -                                       to taste
Oil                                                    -                                       1/2 cup

METHOD
Marinate mutton withginger garlic paste,red chilly powder,coriander powder,turmeric powder,cumin powder,vinegar and garam masala.
Keep in the freeze for half an hour.
Heat oil in a pan,
Add whole garam masala like cumin seeds,black pepper,black cardamom,cinnamon.
Add chopped onion and fry till golden brown.
Add marinated mutton and 2 to 3 glass of water and cook one hour in a low flame.
Add green cardamom powder and ghee / clariffed butter and switch off the gas.
