RICH PLUM CAKE

Prep Time : 20 mins 
Cooking Time : 50 mins 
Serve : 8 

 INGREDIENTS 
Whole wheat flour - 1.5 cup 
Sugar - 1.5 cup 
Unsalted butter - 1/2 cup 
Milkmaid - 1/2 cup
 Vanilla essence - 4 - 5 drops
 Baking powder - 1 tsp 
Baking soda - 1/2 tsp 
Cashew nuts - 2 tbsp 
Chopped dried figs - 4 
Chopped dates - 1 cup
 Almonds - 7 - 8 
Raisins - 2 tbsp
 Cherry - 8 
Sugar - 1/4 cup 
 Salt - a pinch 
Orange juice - 1 cup
 Cocoa powder - 3 tbsp 
Cinnamon powder - 1/4 tsp 
Nutmeg powder - 1/4 tsp 
Dry ginger powder - 1/4 tsp
 Orange zest - 1 tbsp 
Lemon zest - 1 tbsp 

 METHOD 
Cut the figs,dates into small pieces and soak them in the fridge along with cashew nuts and almonds in the orange juice for 24 hours. 
Take a pan on medium heatmelt 1/4 cup of sugar. It will first melt and then turn into a dark brown. Turn off the heat and add about 1/4 cup of water. Heat the oven for 350.F and 180.C Beat the butter,milkmaid and sugar powder until fluffy and add vanilla essence and mix well. 
Add the caramel sugar, soaked half dry fruits, orange juice,orange zest and lemon zest and mix well
 Sieve the flour,baking powder,baking soda,cocoa powder,salt,cinnamon powder,nutmeg powder and dry ginger powder. Mix the dry ingredients into wet ingredients in cut and fold method. 
Pour batter into greased cake pan and at the top add the dry fruits and cherry. 
Bake for 50 mins until the top turns a dark brown and when a skewers inserted into the cake comes out with moist crumbs.

MAKKA FLOUR MATHRI

Prep Time : 15 mins 
Cooking Time : 30 mins
 Serve : 4 

 INGREDIENTS 
Makka flour - 1 cup 
Suji - 1/2 cup 
Wheat flour - 1/2 cup 
Carom seeds - 1/4 tsp 
Onion seeds - 1/4 tsp 
Crushed coriander seeds - 1/4 tsp 
Whole black pepper - 4 - 5 
Salt - to taste 
Clarified butter - 4 tbsp 
Oil - for frying 

 METHOD 
Take a large bowl combine makka flour,salt,suji,carom seeds,onion seeds,crushed coriander seeds,whole black pepper,salt and clarified butter. 
The texture should be crumbly. 
Make a stiff dough with the help of water. 
Cover the dough and keep aside for 15 mins. 
Divide the dough into equal size balls. 
Then with palm gently press each roll in mathri shape. 
Heat enough oil in a pan. 
Deep fry on low flame till golden n crispy. 
Serve hot with tea

INSTANT DHOKLA

Prep Time- 10 mins Cooking time- 10 mins Serve- 4 to 6 INGREDIENTS Besan - 1 cup Suji - 1 cup Curd - 1 cup Sugar - 1 tbsp Salt - to taste Water - 1 cup Oil - 2 tbsp Lemon juice - 1 tsp Eno fruit salt - 1 tsp For tempering Black mustard seeds - 1 tsp Hing - 1/2 tsp Sugar - 1 tbsp Water - 1/2 cup Green chilly - 5 - 6 Coriander leaves - 1 tsp Oil - 1 tbsp METHOD Take a bowl mix together besan, suji, curd, sugar, salt, lemon juice, oil and water to make a smooth paste. Keep aside for 15 minutes. Add eno fruit salt in the dhokla mixture just before making dhokla and mix well. Pour the batter in a greased mould and steam for ten mins Heat oil in a pan for tempering and add mustard seeds,hing,sugar,coriander leaves green chilly and water Pour it over the dhokla .

DATES BESAN LADOO


Prep Time : 15 mins
 Cooking Time : 50 mins
 Serve : 10

 INGREDIENTS
 Besan - 2 cup
 Ghee - 1 cup
 Dates- 20
 Honey - 4 tbsp
 Green cardamom- 1 tsp

 METHOD
 Heat ghee in a pan.
 Roast the besan on medium heat until light brown in color and give out the fragrance 
After stirring for 10 to 15 minutes ,now add chopped dates and mix well turn off the flame.
 Let the besan cool down, now add honey, cardamom powder,mix it well. When it cools completely, shape it into ladoo
 Store it in a air tight container.

MAYOANNAISE GRILLED SANDWICH

 Serve : 2

 INGREDIENTS
 Bread - 4 slices
 Grated carrot - 1
 Grated cabbage - 1/2 cup
 Finely chopped green garlic leaves - 1 tbsp
 Finely chopped green chilly - 1
 Finely chopped coriander leaves - 1
 tbsp Mayonnaise - 3 tbsp
 Black pepper powder - 1/4 tsp
 Chilly flakes - 1/4 tsp
 Green chutney - 4 tbsp 
Salt - to taste
 Butter - 50 gms

 INGREDIENTS
 Take a large bowl add ,carrot,cabbage, green chilly,coriander leaves,green garlic leaves ,black pepper powder,chilly flakes and salt and mix well.
 Add mayonnaise and mix well.
 Now stuffing is ready.
 Take a slice of bread and spread butter and now spread chutney and add veggie mixture and take other bread spread butter and chutney and cover it.
 Place on the hot pan and grease butter from from both the sides.
 Cut into two pieces.
 Now your sandwich is ready to serve.
