INGREDIENTS
For spinach puri
Wheat flour - 1 cup
Spinach / palak - 250 gms
Salt - to taste
Turmeric powder - 1/4 tsp
Ajwain / carom seeds - a pinch
onion seeds - a pinch
Clarified butter - 2 tbsp
Oil - for deep frying
For fresh green gram subji
Green gram/hara chana - 1 bowl
Chopped onion - 1
Ginger garlic paste - 1 tsp
Tomato puree - 2 tbsp
Turmeric powder - 1/4 tsp
Red chilly powder - 1/2 tsp
Coriander powder - 1 tsp
Chopped green chilly - 1
Cumin seeds - 1/4 tsp
Whole garam masala - 1/2 tsp
Salt - to taste
Cream - 1 tbsp
Chopped coriander leaves - 1 tbsp
Oil - 2 tbsp
METHOD
For spinach puri
Wash the spinach and boil in a pan for five mins and add some salt
Cool down for some time then strain it
In a kneading bowl mix wheat flour, boiled spinach,carom seeds,onion seeds salt,turmeric powder and clarified butter.
Make a soft dough.
Keep aside for 15 mins.
Divide the dough into a ball.
Flatten the ball into thin round puri.
Heat enough oil in a pan and add the palak puri.
Lower the heat and fry till light brown.
Serve hot with fresh green gram subji
For fresh green gram subji
Heat oil in a pressure cooker
Add whole garam masala and cumin seeds to crackle.
Add onion and saute for 1 to 2 mins.
Add ginger garlic paste,turmeric paste,red chilly powder,coriander powder and tomato puree and saute till oil leaves the pan.
Add green gram and mix well.
Add cream and half cup of water and cover the lid.
Cook in a low flame for 7 - 8 mins.
Garnish with coriander leaves.
