CARROT RAITA


Prep Time : 15 mins
Cooking Time : 5 mins
Serve : 2

INGREDIENTS
Grated carrot  -  1 cup
Fresh curd   -  1 cup
Peanuts  -  2 tbsp
Chopped green chilly  -  1
Black  mustard seeds  - 1/4 tsp
Chopped coriander leaves  - 1 tsp
Sugar  -  1 tsp
Salt  -  to taste
Oil  -  2 tbsp

METHOD
Heat oil in a pan,add,add peanuts fry and strain it.
Again heat one tbsp oil in the same pan and add black mustard seeds to crackle
Add green chilly and grated carrot and fry for two mins until crunchy.
Turn off the flame.
Take a bowl add curd,salt and sugar and mix well.
Add fried and cooled carrot and mix well.
Garnish with fried peanuts and coriander leaves.
Serve chilled.
