INGREDIENTS
Matar / peas - 1/ cup
Chopped eggplant / baingan - 1 big size
Ginger garlic paste - 1 tsp
Coriander powder - 1 tsp
Red chilly powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Amchur / roasted mango powder - 1/4 tsp
Cumin seeds - 1/4 tsp
Mustard seeds - 1/4 tsp
Hing / asafoetida - a pinch
Salt - to taste
Oil - 2 tbsp
Chopped coriander leaves - 1 tsp
METHOD
Heat oil in a pan.
Add mustard seeds,cumin seeds and hing / asafoetida to crackle.
Add peas and ginger garlic paste and saute for 2 - 3 mins.
Add half cup of water and cover it for 5 mins.
Add chopped baingan / eggplant,coriander powder,red chilly powder and turmeric powder and cook in a low flame for 5 mins.
Garnish with coriander leaves .
Serve hot with chapaties.
