EGGPLANT / BAINGAN RAITA


Prep Time  : 10 mins
Cooking Time : 15 mins
Serve : 2

INGREDIENTS
Eggplant / baingan     -    1
Hang curd   - 1 bowl
Finely chopped onion   - 1 small size
Curry leaves     - 7 - 8
Mustard seeds   - 1/4 tsp
Salt      -    to taste
Sugar     -  1/2 tsp
Oil      - 2 tbsp

METHOD
Wash and cut eggplant / baingan in round shape.
Heat oil in a pan.
Add eggplant / baingan and saute till they are golden and cooked.
Hang the curd in a muslin cloth for 2 - 3 hours then prepared raita.
Beat the hang curd,
Add eggplant / baingan in the curd.
Heat one tbsp oil in a wok.
Make the tadka with mustard seeds,curry leaves and onion.'
Then add the tadka to the eggplant / baingan an d curd mixture.
Season with salt and sugar.'Serve chill or room temperature.
