NAVRATAN PULAO







INGREDIENTS
Basmati rice    -  2 cup
Fried sliced onion   -  2 tbsp
Cottage cheese / paneer cubes  -  2 tbsp
Chopped beans    -   2 tbsp
Chopped carrot   -  2 tbsp
Chopped capsicum   -  2 tbsp
Peas    -  2 tbsp
Almond     -   5 - 6
Cashew nuts   -  5 - 6
Raisins     -  1 tbsp
Clarified butter / ghee   -  2 tbsp
Bay leaf    -  2
Black pepper    -  2 - 3
Cloves   -  2 - 3
Cardamom     -  2 - 3
Cinnamon    -   1 inch stick
Cumin seeds    -  1/4 tsp
Curd   -   2 tbsp
Salt    -  to taste

METHOD
Clean wash and soak rice for 15 mins.
Heat clarified butter/ghee in a pan.
Add onion and fry till dark brown.Strain and keep aside.
Add dry fruits and saute for one mins and strain it.
Add paneer / cottage cheese cubes and stir fry 1 - 2 mins and strain it.
Add bay leaf,cumin seeds,cloves,black pepper,cinnamon and cardamom.
Add mix all veggies and stir fry for 2 - 3 mins in a low flame.
Add ginger garlic paste and mix well.
Add rice and mix well.
Add all dry fruits and cottage cheese and salt and also add 2 cup of water.
Once boiled,simmer the gas and cover it.
Garnish with fried sliced onion and serve with raita.
