INGREDIENTS
Sooji / semolina - 2 cup
Curd - 1 cup
Eno fruit salt - 1 tbsp
Turmeric powder - 1/2 tsp
Chat masala - 1 tsp
Finely chopped beans - 1 tbsp
Finely chopped carrot - 1 tbsp
Finely chopped capsicum - 1 tbsp
Finely chopped green chilly - 1
Finely chopped coriander leaves - 1 tbsp
Grated bottle gourd / lauki - 2 tbsp
Garam masala - 1/2 tsp
Black mustard seeds - 1/4 tsp
Curry leaves - 8 - 10
Cumin seeds - 1/4 tsp
Salt - to taste
Oil - 2 tbsp
METHOD
In a bowl mix together semolina / suji,curd,turmeric powder,chat masala,garam masala powder,salt ,green chilly, coriander leaves and all veggies with enough water for a thick consistency and leave it aside for half an hour.
Add eno fruit salt just before making handvo and mix well.
Heat oil in a non stick pan.
Add black mustard seeds and cumin seeds to crackle and add curry leaves.
Pour the semolina / suji batter and let it cook on the low flame and covered
Cook for 10 mins then flip over till golden brown and crispy.
Cook again for 10 mins till brown and crispy.
Serve hot.
