INGREDIENTS
Chana dal - 150 gms
Gosht - 500 gms
Chopped onion - 2
Ginger garlic paste - 1 tsp
Curd - 1 cup
Red chilly powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Whole red chilly - 2
Crushed garlic - 2 - 3
Finely chopped green chilly - 1 - 2
Clarified butter - 4 tbsp
Green cardamom - 1 - 2
Black cardamom - 1
Nut meg - a pinch
Mace - one piece
Cinnamon - 1 inch stick
Cloves - 2 - 3
Whole black pepper - 2 - 3
Salt - to taste
METHOD
Boil bengal gram / chana dal in a pressure cooker.
Mix with hand blender and keep aside.
Heat clarified butter in a pressure cooker.
Add whole garam masala and saute for one mins.
Add chopped onion and fry till light brown.
Add ginger garlic paste and all dry ingredients and mix well.
Stir continuously till oil leaves the side of the pan.
Add mutton pieces and mix well.
Beat the curd and mix well.
Add salt, garam masala powder and one cup of water and cover the lid and cook till tender.
After two whistle simmer the gas for five mins.
Cook the mutton till absorb the water.
Take out the oil / rogan josh from it.
Add the boiled chana dal / bengal gram in it and also add water.
Cover the lid and cook for five mins.
Heat one tbsp clarified butter / ghee in a pan.
Add two whole red chilly and crushed garlic and temper the mutton.
Add rogan josh / oil in the mutton and serve .
