THAI CHANA SALAD

Cooking Time : 15 mins
Serve : 4

INGREDIENTS
Chickpea/kabuli chana - 1 cup
Chopped carrot - 1
Chopped cucumber - 2
Chopped spinach - 1 cup
Chopped capsicum - 1 cup
Chopped coriander leaves - 1 tbsp
Chopped mint leaves - 1 tbsp
Salted peanuts - 1 tbsp
Lemon juice - 1 tbsp
For dressing
Peanut butter - 1/4 cup
Soy sauce - 1 tbsp
Honey - 1 tbsp
Sesame oil - 1 tbsp
Vinegar - 1 tbsp
Red chilly sauce  1 tbsp
Grated ginger - 2 tsp
Lemon juice - 1 tbsp

METHOD
Wash and soak chickpea over night and pressure cook with one cup of water for ten mins.
Take a bowl add boiled chickpea,carrot,cucumber,spinach,capsicum,green coriander leaves,mint leaves,lemon juice and salted peanuts and mix well.
Before serving add the dressing and mix well.
