RAINBOW RICE

 


Prep Time  : 15 mins
Cooking Time : 20 mins
Serves  : 2

INGREDIENTS
Boiled basmati rice   -  2 cup
Chopped mix veggies
(beans,carrot,peas,spinach)   -  1 cup
Chopped onion    -   1 medium
Green cardamom   -    2
Black cardamom   -    1
Cloves                     -   2
Clarified butter / ghee   -    2 tbsp
Salt                                 -    to taste
Grated ginger - 1 tbsp
Grated garlic cloves - 1 tbsp

METHOD
Heat clarified butter / ghee in a pan.
Add cardamom and cloves to crackle.
Add onion and saute for one mins. now add grated ginger and garlic and mix it well/
Add mix veggies and and saute for 4 - 5 mins.
Add boiled rice and salt and mix well.
Serve hot with aloo bhaji .green chutney,mango sweet chutney and mixed fruit raita.
