BHARWA BAINGAN

Serve : 2

INGREDIENTS
Eggplant / baingan      -  500 gms
Chopped onion           -   1
Ginger garlic paste      -  2 tsp
Coriander powder        -  1 tsp
Turmeric powder         -  1/2 tsp
Roasted peanuts           -  1 tsp
Cumin seeds                    -  1 tsp
Whole red chilly - 3 - 4
Green chilly - 2
Salt                                 - to taste
Chopped tomato - 1
Clarified butter / ghee     -  4 tbsp
Chopped coriander leaves  -  1 tbsp

METHOD
Wash and clean the eggplant / baingan stalk trimmed and partially slit into quarters.
Dry roast the peanuts,cardamom ,cumin seeds and coriander powder and make a paste
Heat clarified butter / ghee in a pan.
Add eggplant / baingan and shallow fry for 8 - 10 mins in a low flame.
Again heat clarified butter / ghee in a pan.
Add cumin seeds to crackle.
Add sliced onion and fry till  transparent add garlic cloves and ginger pieces and now add chopped tomato and dtir fry for 2 - 3 mins and turn off the flame,once cooled to make a paste  and also make the powder of dry roasted masala.
Heat oil in a pan add hingwhole red chilly, green chilly and cumin seeds to crackle and add onion and tomato paste and saute for 3 - 4 mins and now add the spices one by one and saute for 1 - 2 mins.
Add roasted masala powder and salt and mix well
Add one cup of water and bring to boil.once boiled add the fried baingan cover it and cook for five mins and turn off the flame.
Garnish with coriander leaves and serve
