CUCUMBER CARROT SANDWITCH

 



Prep Time  : 15 mins
Cooking Time  : 10 mins
Serve : 2

INGREDIENTS
Bread   -  4 slice
Finely chopped cucumber  -  1 bowl

Grated carrots - 1 bowl
Butter  -   1 cube
Black pepper powder  -  a pinch
Mayonnaise - 2 tbsp


METHOD
Finely chopped the cucumber and grated the carrot.
Add mayonnaise and sprinkle some black pepper powder and salt and mix well.

Spread the mayonnaise cucumber carrot mixture on the top of the bread.
Cover this stuffed slice to other slice.
Heat non stick pan.
Grease with butter and place the sandwich on medium flame and grill it.
Spread the butter both the sides get golden brown.
Serve hot .







MANGO SEWAI

 



Prep Time : 15 mins
Cooking Time : 15 hours
Serve : 2

INGREDIENTS
Milk     -  1 cup
Milkmaid  - 1 cup
Vermicelli sewai - 1/4 cup
Mango puree  - 1 cup
Mango chunks  - 1 cup
Chopped apple  - 1 cup
Cashew nuts  - 1 tbsp
Pumkin seeds  - 1 tsp
Pistachio  - 1 tsp
Clarified butter  - 1 tsp
Cherry  - for garnishing
Mint leaves for garnishing



METHOD
Heat milk in a heavy bottom vessel,once boiled keep it in a low flame.
Heat clarified butter in a pan add vermicelli and fry until pink and now add the  milk.
Add milkmaid and mix well.
Turn off the flame and stir allow to cool completely
Then keep it in the fridge.
Mix the mango puree and mix well.
Mix dry fruits ,chopped apple and mango chunks.
Pour into the bowl and at the top add mango chunks,chopped apples and crushed dry fruits.
Garnish wth ,mint leaves and serve chilled.

CUCUMBER RAITA

 



Prep Time : 10 mins
Cooking Time : 5 mins
Serve : 2

INGREDIENTS
Hang curd        -    1 cup
Sliced cucumber       -     1bowl
Salt            -   to taste
Black salt      -    1 tsp
Roasted cumin seeds - 1 tsp
 Sugar   -     1 tsp

                             -                                              1
METHOD
Hung the curd in a muslin cloth for 4 - 5 hours then prepared raita.
Beat the curd.
Add sugar,salt ,roasted cumin seeds and black salt and mix well.
Add sliced cucumber in the curd and mix well.
Heat oil in the pan.
Add black mustard seeds,asafoetida / hing and whole red chilly and switch off the gas and this thadka add in the curd.
Serve chilled.

ALOO TIKKI

 




Prep Time  : 15mins 

Cooking  Time  : 15mins 

Serve : 2

Grated cabbage    -   2 tbsp
Grated carrot        -  2 tbsp
Grated capsicum    -   2 tbsp
Red chilli powder   -    1/2 tsp
Chopped green chillies  -    2
Bread slice     -    2
Rice flour  - 2 tbsp
Salt      -    to taste
Oil     -   2 cup

METHOD
Dip the bread slice in bowl filled with water
.Drain extra water and mash the bread slice.
   In a bowl add all the above ingredients and mix well.
   Shape each ball to flat patties of medium thickness.
Heat oil
  Deep fry in hot oil until golden in color
  Flipping once in between.
  Always cook in medium flame'
  Drain in paper napkin.
  Serve hot with tea.









TOMATO RICE

 


Prep Time  : 10 mins
Cooking Time  : 15 mins
Serve  : 2

INGREDIENTS
Cooked brown rice  -  1 cup
Grated carrot  -  2 tbsp
Grated cucumber  -  2 tbsp
Whole green chilly  -  1 - 2
Tomato - 2
Chana dal/bengal gram  -  1 tsp
Urad dal/lentil  -  1 tsp
Cumin seeds  - 1/4 tsp
Black mustard seeds/rai  - 1/4 tsp
Asafoetida  -  1/4 tsp
Grated ginger  -  1 tsp

Kashmiri red chilly powder - 1 tsp

Grated garlic - 1 -  2
Coriander leaves  -  1 tsp
Salt  -  to taste
Oil  -  2 tbsp

METHOD
Heat oil in a pan.
Add urad dal,chana dal,cumin seeds,black mustard seeds and asafoetida .
Fry  till the color of the dal/lentil  is change.
Now add the onion,ginger,whole green chilly garlic and mix well for few minutes.
Add tomato and mix well.
Add the boiled rice in a pan.
Add coriander leaves and salt , kashmiri red chilly powder and mix well.
Garnish with coriander leaves and serve with curd and salad

BREAD PAKODA

 


Prep Time : 25 mins
Cooking Time : 15 mins
Serve : 2

INGREDIENTS
Bread  -  2 slice

Chopped onion - 2 tbsp

Chopped green chilly - 1

Chopped coriander leaves -1 tbsp 

Gram flour  -  2 tbsp
Rice flour  -   1 tbsp
Corn flour - 1 tbsp
Salt  -  to taste
Oil  -  for frying

METHOD
Take a large bowl add gram flour,rice flour,corn flour and salt and make a thick batter with the help of water.

Now add chopped onion, green chilly and coriander leaves and mix well.
Heat oil in a pan.
Coat the bread slice with gram flour batter and deep fry in hot oil until brown and crispy.
Drain it.
Serve hot with tomato sauce.
