INGREDIENTS
Mutton pieces : 300 gms
Washed and soaked for 1/2 an hour basmati rice - 2 cup
Clarified butter - 3 tbsp
Black cardamom - 1
green cardamom - 2
Cloves - 6
Star anise - 1
Whole black pepper - 6
Cinnamon - 1 inch stick
Cumin seeds - 1/2 tsp
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Red chilly powder - 1/2 tsp
Turmeric powder - 1/4tsp
Salt - to taste
METHOD
Heat clarified butter in a pan.
Add cumin seeds,whole black pepper,cloves,cinnamon stick,black and green cardamom to crackle.
Add chopped onion and saute for 3 - 4 mins now add ginger garlic paste,red chilly powder,turmeric powder and one tbsp water and saute until oil leaves the pan.
Add mutton pieces and mix well.
Add one cup of water and cover the pan with lid and cook in a slow flame for twenty mins.
Add rice and salt and two cup of water.
Cover the lid and cook in a simmer for ten mins.
When the water is dry and rice and mutton is cooked turn off the flame.
The mutton taheri is ready to eat.
Serve hot with raita.
