INGREDIENTS
Eggplant / baingan - 250 gms
Chopped garlic cloves - 2 - 3
Cumin seeds - 1/4 tsp
Mustard seeds - 1/4 tsp
Asafoetida - a pinch
Red chilly powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Dry mango powder / amchur - 1/4 tsp
Roasted cumin seeds powder - 1/4 tsp
Salt - to taste
Oil - 1 tsp
METHOD
Wash and cut the eggplant / baingan into two parts.
Heat oil in a pan.
Add cumin seeds,mustards seeds and asafoetida to crackle.
Add garlic cloves and stir fry for one mins.
Add eggplant / baingan ,red chilly powder,turmeric powder and mix well.
Add roasted cumin seeds powder ,dry mango powder,salt and sprinkle some water.
Cover it and cook in a low flame for five mins.
Serve hot with chapatis or rice,
