CARROT AND YELLOW MOONG DAL/LENTIL SALAD


Prep Time  : 15 mins
Cooking Time : 5 mins
Serve  : 4

INGREDIENTS
Yellow moong dal/lentil  -  1/4 cup
Finely chopped carrot  -  1 cup
Oil  -  2 tsp
Cumin seeds  -  1/4 tsp
Finely chopped dry coconut  -  1/4 cup
Chopped coriander leaves  -  2 tbsp
Chopped green chilly  -  1/4 tsp
Lemon juice  - 2 tbsp
Finely chopped ginger  -  1 tsp
Salt  -  to taste
Black pepper powder  -  1/4 tsp
Sugar  -  1/2 tsp

METHOD
Soak moong dal for 4 - 5 hours and strain it.
Take a bowl add lemon juice,sugar,salt,black pepper powder and chopped ginger and mix well.
Now dressing is ready.
Heat oil in a pan.
Add cumin seeds to crackle.
Add yellow moong dal/lentil and cook for 2 - 3 mins and turn off the flame.
Take a bowl add carrot,coriander leaves,green chilly,coconut and mix well.
Add yellow moong dal/lentil and dressing and mix well.
