FALAHARI BHEL

Prep Time       :15 mins
Cooking Time  :10 mins

INGREDIENTS
Peanuts          -3/4 cup
Makhana        - 2 cup
Boiled diced potato    - 1
Chopped green chillies   -2
Chopped tomato             - 1
Chopped cucumber         - 2 tbsp
Lemon juice                     - 1tsp
Chopped coriander leaves  -2 tbsp
Sendha namak                     - to taste
Oil                                       - 1/2 cup

METHOD
  Heat oil in a pan.Add peanuts and deep fry in hot oil until golden in colours. Drain extra oil in paper napkin. Again heat oil in pan. Add makhana and fry it.After 2-3 minutes , makhana get crispy.
   In a large bowl add potato, cucumber tomato, fried peanuts, fried makhana, green chillies, coriander leaves and sendha namak and mix well.
  Add lemon juice and mix well. Yummy falahari bhel is ready to eat.  Serve quickly.

SABUDANA VADA



Prep Time       : 15 mins
Cooking Time  : 10 mins

INGREDIENTS
Sabudana                 - 1 cup
Roasted peanuts        - 2 tbsp
Boiled potatoes          - 4
Green chillies             - 2
Red chillie powder     - 1/2 tsp
Ginger                         - 1 inch stick
Chopped coriander leaves   - 2 tbsp
Salt                                   -   to taste
Rice flour                        - 2 tsp
Oil                                   - 1/2 cup

METHOD
     Wash and soak sabudana for 4 hours.Then drain sabudana completely.Add Roasted peanuts after removing their husk, sabudana, green chillies and ginger and after adding,grind it. Peel potatoes and then mash it.Add mashed potato along with red chillie powder, salt, coriander leaves and mix well.
    Shape each ball to flat patties of medium thickness.Heat oil in kadai. Deep fry in hot oil until golden in colour.
Always cook in medium flame.Drain extra oil in paper napkin.
Serve hot with green chutney.

FRENCH SANDWICH

Prep Time      : 20 mins
Cooking Time  : 15 mins

INGREDIENTS
Butter                - 1 cube
Brown bread slice        - 4
Processed cheese          - 1 cube grated
Chopped cucumber       - 1
Chopped tomato            - 1
Chopped coriander leaves    -1 tsp
Tomato sauce                       - 1 tsp
Green coriander chutney      - 1 tsp
Black pepper                         - a pinch

METHOD
  Apply butter on the bread slice , then spread tomato sauce on the bread slice and put chopped cucumber ,chopped tomato and chopped coriander leaves.Cover this stuffed bread slice withanother slice.Spread butter on the top of this slice. Now apply grated cheese on the top of this slice and sprinkle black pepper. Cover it with another slice.Apply butter on the top of slice .Spread the coriander chutney in it and cover with another bread slice.
 Trim the edges of the bread.
 Cut in half and serve on a plate.

BANANA RAITA

Prep Time         : 10 mins
Cooking Time   : 5 mins

INGREDIENTS
Ripe banana sliced       - 2
Hang curd                    - 1/2 cup
Black salt                     - to taste
Sugar                            - 1/2 tsp
Red chillie powder        - 1/2 tsp
Roasted cumin powder   - 1/2 tsp

METHOD
     Hang the curd in a muslin cloth for 2-3 hours and then prepare raita.
Beat the hang curd, sprinkle black salt. roasted cumin seeds, sugar and red chillie powder.
Add banana and mix well.
Serve with biryani.

CHANA DAL BURFI

Chana dal burfi is very easy to prepare.It is very healthy and delicious in taste.
Prep Time      ; 15 mins
Cooking Time   : 20 mins

INGREDIENTS
Chana dal              - 1 cup
Ghee                      - 1/2 cup
Sugar                     - 1/2 cup
Milk                       - 1/2 cup
Crushed cashewnuts - 1 tsp
Chopped almonds      - 1 tsp
Raisins                       - 2 tbsp
Green cardamom powder  -1 tsp

METHOD
   Wash and soak chana dal for 4-5 hours'Grind the dal in a  mixture without water. Heat ghee in a kadai and add grounded dal. Stir it continuously for 8-10 minutes till it turns golden brown and gives out the fragrance.
     Heat sugar and milk in a pan. Keep it medium flame for 8-10 mins. When its get stick it means syrup is ready. Add roasted chana dal, cardamom powder in it and mix well.
   Grease the plate with oil and pour the thick consistency of chana dal and spread in the plate.
  Add raisins , chopped almonds and cashewnuts. Set one hour in the freeze. Cut into diamond shape and serve it.

SURAN KA CHOKHA


Prep Time         : 10 mins
Cooking Time   : 10 mins

INGREDIENTS
Suran             - 250 gms
Lemon  juice         - 2 tbsp
Chopped green chillies    - 7-8
Mustard oil                      - 1 tsp
Salt                                   - to taste
Chopped garlic cloves       - 7-8

METHOD
   Wash and clean the suran. Cut into pieces.Boil in a pressure cooker. When cooker release the whistle simmer the gas for ten minutes.
     After some time we open the cooker lid. Peel the skin of suran and mash it. Add green chillies, garlic cloves, salt and mustard oil and mix well.
     At the end , squeeze off lemon juice and serve.

BHARWAN BAINGAN


Prep Time    : 15 mins
Cooking Time  : 20 mins
Serve : 2

INGREDIENTS
Baingan                       - 250 gms
Ginger garlic paste      - 1 tsp
Coriander powder        - 1 tsp
Turmeric powder         - 1/2 tsp
Red chillie powder       - 1 tsp
Amchur powder            - 1/2 tsp
Garam masala               - 1/2 tsp
Chopped green chillie    - 2
Asafoetide                       - a pinch
Cumin seeds                    - a pinch
Oil                                    - 2 tbsp
Salt                                   - to taste

METHOD
         Wash and clean the baingan.Stalk trimmed and partially slit into quarters.
In a small bowl  mix all the ingredients well  except oil and adjuct salt according to your taste.Stuff this ingredients in the baingan..
        Heat oil in a pan. Add cumin seed and asafoetide to splutter. Add baingan and cover till it is cooked in low flame.
         When color of baingan becomes lightly brown then turn over another side.
          Serve hot with rice or chapties

CHANA DAL CHEELA

  Chana dal cheela is very easy to prepare. It is very healthy and delicious in taste.

Cooking Time  : 10 mins

INGREDIENTS
Chana dal            - 1 cup
Chopped onion    - 1
Chopped green chillie    - 1
Chopped coriander leaves   - 2 tsp
Cumin seeds                        - a pinch
Salt                                      - to taste
Oil                                       - 2 tbsp

METHOD
     Wash and soak chana dal for 4 - 5 hours. Then drain chana dal completely and grind it.
Mix salt, onion, green chillies, coriander leaves and cumin seeds.

      Heat oil in a pan and spread chana dal and cook till the mixture is sticky. Flip it when done one side until golden brown.

     Serve hot with sauces.

VEGGIE CHEELA

Prep Time    : 15 mins
Cooking Time  : 10 mins

INGREDIENTS
Wheat flour         - 1 cup
Suji                      - 2 tbsp
Chopped onion     - 2 tbsp
Chopped green chillies   - 2
Grated cabbage               - 2 tbsp
Chopped capsicum          - 2 tbsp
Grated carrot                    - 2 tbsp
Chopped coriander leaves  - 2 tbsp
Red chillie powder             - 1/2 tsp
Salt                                      - to taste
Oil                                       - 1/2 cup
Water                                   - as required

METHOD

    In a bowl mix wheat flour, suji, onion, green chillie, capsicum, cabbage, carrot, coriander leaves, salt, red chillie powder and enough water for a thin batter. Keep aside for 15 minutes.
    Now heat the oil in a non stick pan and spread the mixture in a medium flame. Flip when done on one side until golden brown.
    Serve hot with sauces.

CHANA SALAD

INGREDIENTS

For dressing
Olive oil          - 1tsp
Red chillie powder  -1/2 tsp
Garlic paste             - 1/2 tsp
Lemon juice            - 1 tsp
Sugar                       -1/2 tsp
Chopped green chillies   - 2
Salt                               - to taste

For salad
Chickpeas         - 1 cup boiled and chilled
Tomato              - 1/2 cup
Spring onion      - 1/2 cup
Paneer                - 1/2 cup
Chopped green chillie   - 1
Chopped coriander leaves   - 2 tbsp
Sugar                                   - tsp
Salt                                      - to taste

METHOD
     In a large vessel  add chickpeas, tomatoes, spring onion, paneer, green chillies, sugar, salt and coriander leaves and mix well. Now add the dressing and again mix well.
     Garnish with green coriander leaves and serve.
